Exactly my thought for a long time. Something is askew with the likes. There is no way a master chef and showman like Trupp has no views.

Fantastic explanation chef on making and holding the sauces. I am going to have to give the soy lecithin a try.

Thank you and it works pretty well even if the sauce stands for long However if you try the syphon you need to make the sauce a little bit more liquid as I found it needs it and stops it from breaking Good luck 😉
