WHOOPIE PIE RECIPE! AWESOME!
1 Stick of Butter
1 C Sugar
½ tsp Salt
½ tsp Baking Powder
1 ½ tsp Baking Soda
½ C Unsweetened Cocoa Powder
1 Large Egg
1 C Milk
2 C AP Flour
1 tsp Vanilla
1/2-1 C Butterfingers (smashed up)
IF MAKING THE BUTTERFINGER RECIPE: Add about 1/2 C of smashed butterfingers to the end of the recipe, mix in well, and then start baking them :) 8-10 minutes depending on your oven.
Then roll the sides once put together in the extra Butterfingers :) ENJOY!
Heat oven to 375 Degrees
Beat Butter, Baking Soda, baking powder, salt, and sugar, until smooth.
Add in the egg and vanilla, and beat until combined. Scrape down the sides of the bowl.
On low speed, slowly add your milk until blended.
Stir in flour and mix until well combined.
Drop by spoonful onto a piece of parchment paper OR spray a cookie sheet with non-stick cooking spray. Cook for 8-10 minutes or until the toothpick comes out clean or the top springs back easily, remove and let cool completely, before you add your cream to them.

SWISS BUTTERCREAM
My recipe for years and it is perfect and not too sweet!
6 Large Eggs WHITES room temp
1 ½ C Sugar
2 C Powdered Sugar
2 C Unsalted Butter
¾ C Vegetable Shortening
1 TBLS Vanilla
In a double Broiler, add Egg whites and sugar, and continuously stir until it is 160 degrees and the sugar is NOT gritty. Add to your stand mixer bowl (and be SURE this bowl is free from any oils). With the whisk attachment whisk it until STIFF PEEKS form and be SURE IT IS COOL before going on. ROOM TEMPERATURE IS BEST BEFORE YOU ADD THE BUTTER!
NOTE: I added 2 ice packs to the bottom outside edges of my bowl to help it cool while whisking it.
Add all at once the SIFTED powdered sugar, at low speed until mixed and then med speed until well blended.
Then as the mixer is on low to med speed, add all the butter and shortening until WELL COMBINED!
Switch to the paddle attachment once all is well combined and then add the vanilla until smooth.
All done! Now make your whoopie pies or cake, whatever you chose to use this for. You can pipe this recipe also and worked very well.
You can freeze this also and last for many months in the freezer. When you take it out, put it into the refrigerator overnight. When you take it out to use it, just add it to the stand mixer again and whip it up for a few minutes to get it smooth again, and it's ready to use. PERFECT!
