I was trying to remember where I ate this type of brownie that I adored as a kid, and I kept looking at pre-made mixes in grocery stores for something like caramel brownies. Nothing looked to be a match (they really don’t seem to have a pre-made mixture for this type of brownie - crazy). And then I was just looking through an old cookbook from my mothers house, and I found the dang thing! It was butterscotch brownies and I used to make them as a kid. Haha. I loved them so much! I’m so excited to try them again. My Betty Crocker recipe is a bit different than Lynja’s though... It requires 1/4 cup of shortening or vegetable oil, 1 cup of packed brown sugar, 1 egg, 1 teaspoon of vanilla, 3/4 cup of all purpose or whole wheat flour, 1 teaspoon of baking powder, 1/2 teaspoon salt, and 1/2 cup of chopped nuts (optional - I never added nuts as a kid). The directions are: Heat oven to 350° F. Heat shortening over low heat until melted (if you are using vegetable oil, then obviously you don’t need to melt that); remove from heat. Mix in brown sugar, egg and vanilla. Stir in remaining ingredients. Spread in greased square baking pan, 8x8x2 inches. Bake 25 minutes. Cut into one and three-quarter inch squares while warm. Makes about 1 and a 1/2 dozen brownies, 120 cal each. I think I’m going to make my Betty Crocker recipe first, and then try Lynja’s to compare. Perhaps hers is an update to Betty’s recipe - who knows! I just know that I am excited to eat this again because it’s been around 30-35 years I think since I’ve eaten them lol.
