Can confirm. Once I tried Parmigano Reggiano, I refused to consider any other form of Parmesan, they just didn't taste as good. Costco is the only place I buy it because I get a large wedge for a good price.

Their Pecorino Romano is excellent too. I grate and mix the two. Keep your hands off the cheese to prevent mold.

FWIW, Once Trader Joe's discontinued their Asiagao cheese wedges, I tried various Costco cheeses ... and settled on Pecorino Romano ... my new "go to."

Best way to keep it is to wrap in a dry paper towel, then Saran Wrap, and finish with either aluminum foil or place in a small zip loc bag. If your refrigerator has a tendency to create too much moisture, you can freeze it.

Parmesan Reggiano often gets white crystals on it. This isn't mold.

You need to not contact the cheese with your hands. Had the same problem but it was gone once I stopped touching the cheese.
