In this video, I show how to make raw and cooked beef salad, plus a soup of beef organs (offal) to eat with it.
The raw one contains beef bile. I referred to it as "bitter sauce" in the video. A few people have asked what it is and where to get it. You can usually find it in Southeast Asian (Lao, Thai, Cambodian, Vietnamese, Filipino) and some Latino/Hispanic markets. It is either fresh or frozen. Go to the meat department and ask if they have it.

if you have time to make yourself it will be better because you can control how dark it is. next best is the homemade powder that someone drops off to sell at the market. they also have mass market kind, but that is last choice.

Luca See I usually use the Pantai padek. For the bile, I don't know what brand. Whatever is available at the store. The bile is usually frozen.

Caroline Nguyen we also have to be careful because there's also another kind of "betel leaves" that people use for chewing with tobacco. What kind of Jeow Padek are you asking about? The one you dip with rice? or for sour fruit?

Lena Saeng you can use any brand of padek (fermented fish sauce) that you prefer. Just make sure it’s not the padek that they brewed for papaya salad.

Most stores don't sell it, but some South East Asian stores might. Ask For cow "bile" typically used for Lao cooking if required.

Yvonne Moua It's beef bile. You can find it frozen in many Asian markets. You can also check local Latino meat markets too.

pak eelerd" is also called bai plu in Thai and Lao; bai = leaf, plu = name of the leaf. ใบชะพลูThe betel (Piper betle) is the leaf of a vine belonging to the Piperaceae family, which includes pepper and kava. Betel leaf is mostly consumed in Asia, and elsewhere in the world by some Asian emigrants, as betel quid or in paan, with Areca nut and/or tobacco.In India and Sri Lanka a sheaf of betel leaves is traditionally offered as a mark of respect and auspicious beginnings. Occasions include, greeting elders at wedding ceremonies, New Year, offering payment to Ayurvedic physicians and astrologers where usually money and/or areca nut are kept on top of the sheaf of leaves and offered to the elders for their blessings.
