For this episode we're tasting the fruit from four different cacao pods. Here at the Zorzal Cacao Farm in the lush mountains of the Dominican Republic, they grow twelve varietals of cacao, each containing their own unique flavor. Normally, when we discuss flavor based on varietal, we are referring to the dried cacao seeds. In this case we're referring to the juicy pulp surrounding the fresh seed, which also differs in taste depending on its genetics.

THAT WAS AWESOME! I've been in the DR for the last 20 years... I currently live right outside of San Francisco, like 1 1/2 hours away from Zorzal according to Google. First I would like to think Dylan and everyone involved in all of the videos. In my old house in Puerto Plata we had around 20 cacao trees and most of the time we didn't pay attention to them. But recently for health reasons I decided to figure out a way to make a chocolate that would be healthy and amazing. That's when I found this channel and SUBSCRIBED after seeing 2 or 3 videos. Before moving to do missionary work here I worked in TV News in Philadelphia and studied Psychology in college... I could tell from the first video I saw on MOLDS... "This Guy has it together, he knows what he's talking about... he has no reason to lie to you and surrounds himself with like minded people!" It is a blessing to be able to pick your own cacao... extract the pulp and add it to smoothies.... control the fermentation and drying... separate the hulls and make a tea that makes you feel like you're relaxed and happy (Like watching a great movie and ready for bed) and then make your own chocolate! Thanks to this channel... in less than 2 months I'm making AMAZING Healthy chocolate using science, my Vitamix and molds from Amazon. My wife wants to buy me a real melanger and my friends are bringing me their best cacao pods just to get a chocolate bar and are offering to work for me if I start a business. Honestly I've only tasted chocolate close to this in Italy! If people only knew what they had in their own backyard and the joy of the craft... the world would be different. Thanks for all of the shared knowledge! PS: I hated chocolate my entire life... until I made it myself! Now I LOVE Craft Chocolate and I'm spreading the word LOL (Hopefully one day I can try the chocolate from you guys at CCTV... if I can get it here unmelted. 😅

So is it possible to make dark chocolate out of those white beans? Or do they only spit out white mass? Or are those not something chocolate makers use?

There are makers making dark chocolate from white beans, such as criollo and catongo, everyday. They will darken slightly during fermentation/drying and then more during roast, making dark chocolate that’s actually light to medium brown, like milk chocolate. They tend to taste lighter, less bitter and have a slight woody or cereal-like flavor that’s characteristic, but it really depends.

Is there any use for the meat and husk of the shell , not the seeds, Even a high nitrogen source, or turned into a byproduct, or something?

The fruit is amazing to eat or drink as juice and husk makes get tea. It's just like most things in life... When you don't know ... you don't know! But for chocolate making the "meat" helps with the fermentation and many responsible places return the husk to the soil if not sold for making tea.
