Opuntia. They’re everywhere. Some grow really far north and can handle being froze during the winter no problem. They also make prickly pear fruits that are edible as well.

My grandma and I use to eat these outside in Laredo Texas. She has a garden full of cactus. We would just carve the skin like peeling a potato and put lime and chili powder and eat it. Very refreshing in hot weather because cactus hold a lot of water.

I make mine into a stew like how you would do okra. With Rotel or diced tomatoes with green chiles, onion, garlic, jalapeños if you need a little more kick or you didn’t add the green chiles, garlic power, some other spices. It’s very good almost like a nopalito gumbo! ❤

I love nopales.... I like making mine with cilantro and onion.. after boiling and rinsing.. I sauteed it with onion and garlic and cilantro... So delicious.. my mom used to make it also

You make your green beans sauteed in butter? That's interesting. Do you boil them first or something? I normally make green beans boiled, served with boiled eggs, boiled potatos and olive oil, occasionally with sauteed ham on top.

Be aware, not all cactuses are edible, THIS onenis edible but dont go out and pick cactuses like they are fruit unless you know that is edible.
