I think they're using a poetic license.

You didn't continue the lyric: "down to the skin and stone" which brings to mind the phrase "skin and bone". So this use of "skin and stone" is a poetic substitute for the single word "bone". Their lyrics are meant to create images, and in this case aren't meant to be taken literally.

I hope you're not a fan of the Mars Volta. Their music is chock-full of grammatical errors and made up words. Not to mention the fact they used a lot of "Spanglish" on their first two records.

The phrase "Working your fingers down to the skin" is a solecism. Calexico has revealed a degree of ignorance in writing that lyric. Ruins an otherwise good song by drawing attention to a misuse of language.
