"How do I know what the temperature is?" Water boils at 212F and for every PSI above atmospheric pressure, you raise the boiling point by approximately 3F. Of course, there're some adjustments for your elevation, but this will get you in the ball park. With just a pressure gauge on a canner, one can easily calculate the temperature inside.

Thank you for sharing this video! My daughter bought the XL Pro, but for the reasons you stated, I would not use it for canning. No need for special canner for water bath method. My Daughter bought a nice Presto 23 quart canner for my Mother's Day gift and now I can can in confidence and safety.

Thank you for this info, Heather. I also have the power pressure cooker xl but had yet to try the canning feature. I wasn't afraid to try it but just didn't have a batch small enough to try it out. But after having watched your video, it has caused me to take more caution.

Thank you so much for posting this, I couldn't wait so ordered my canner, unfortunately I had to go with the Presto because my stove has coils so I need a flat bottom for even heat distribution and got the weight regulator as well. I've also have the power pressure xl cooker and have been weary about that canning button, something just irked me about the safety since there was conflicting statements about it...I so look forward to canning and will check out the links you provided.

Starting small and starting easy. I have an electric stove...no choice as I rent and that is all they have here. For my birthday i was given $200.00 by my son.... awesome kid of 26. So I went to Walmart. I got a new stock pot, a water caner. New oven mitts, Two boxes of pint jars. canning tools. new ,measuring cups and spoons. some box pectin 7 boxes. a large jug of apple cider vinegar and a box of course salt. I got new liners for the electric stove to prevent anything burning under the burners.....That came to $175.00. :) I had enough to put $20.00 in the gas tank for my can and a nice lunch out with my BFF. All in All great birthday... I want to thank you for all your videos as they have taught me alot. Including how much love you put into everything and everyone in your household. Keep it up please.....

Great info. Although I have a new Presto for my birthday in April (no pressure gauge) I still love it. I have had such amazing success as a newbie that I can't contain myself. If I ever have to purchase a new canner it will be an All American. I also have one book that you put a review on and the bible from the USDA. Got a few more to get but I will get them. I really want to learn to pressure can. but due to funds I am going to start with water bath canning. I am also scared of pressure canning. now get this... I work in sterile processing. We sterilize instruments for surgery. steam sterilizing 270 temp for 4 min and 20 dry. so how is it I am terrified to pressure can? These are huge machines been doing it since 1996. I need to be more like you. just do it. lol. maybe in a few months we will have the extra money to purchase the canner. I think we can afford the water bath canner to start. That is my goal. please keep up the great work. Love watching your videos. Today you have been with me while I showered,put on my make-up,fed the cats and dogs,got dressed and ate brunch before going off to work. you have been to Kroger,made blueberry jam,this video,and a few more. Love it.

Exellent information and I need to do somthing on this line because tristar lied to me and said they had had all the testing. So I have told 100's of people to not do it they only get to 11 psi if it doesn't fail not safe. And a pressure canner minimum size has to hold at least 4 quart jars like my mini :)

I love your videos. I've been starting to do canning and I've bought a few books on it, but I have a question. I am only doing a water bath canning until I get better at it, but when do I know to do a liquid pectin and when do I use the powdered. I see recipes for both in the Ball cookbook, but just not quite sure if there is a hard and fast rule for which to use?

Good for you for putting this out there. Why, in this day & age, would anyone take a chance with their families' lives. I also have a gas stove, & I have the Presto, (as AA is way too heavy for me), & I LOVE it. I love canning, nothing more satisfying, in the preservation arts. Again, thank you for educating those who are unable to discern facts for themselves.

I'm sharing this video! Someone told me when I got my pressure cooker that I could pressure can in it. I was like, No way will I do that. I would be terrified to do that. Totally agree with you sweetie! There are many unsafe youtube video's so always go directly to the source and only use approved methods and approved tested recipes. Best to stay safe and only pressure can in a real good pressure canner with a weighted and temperature gage, so there is no guesswork involved. Just read the pressure canner's directions and follow them and approved tested recipes.

Thanks for your suggestion for the natural sunscreen. It came the other day and both my husband and I have been using it. We're both really pleased. I've found that it doesn't bother my eyes and skin the way others have and it absorbs faster and better. I see the AC must be fixed as the pantry is back in order. Now waiting on your canning videos since I've been I'll and on O2 and can't can. Depending on you to fulfill my need through videos!!! I fill you are correct. If you can't see the amt of pressure in the canner it's not safe. Even if the gage is not working we still have the weight to see how much pressure. I love, love, love my All American Canners!!!! And my Ball Fresh Tech water bath canner! Iti also doubles for a big Cooker and doesnt tie up a burner. It can set on jthe side of the sink to be filled and the spout to drain. Happy Canning!!!!!

GREAT video. I pressure cook in my pressure CANNER but one can NOT pressure can in a pressure cooker since they do not achieve the needed pressure for safe canning.

I'm gonna ask you the same question I asked Heather....Ahem...For my altitude of 1500 feet all the books state 11 psi for pressure canning. My pressure cooker (not the one with the dial) cooks at 15 psi. Okay... here's my question....Would the slightly higher pressure make a difference in OVER prossessing? Or am I ok prossessing at 15 psi.

+John Caulfield sorry John......so many comments, my phone doesnt show me all of them. you should be ok with 15lbs of pressure. ..you might lose a bit of the liquid in your jars is all. how do your jars look when you pull them from your canner?

OK so moral of the story is if you get a pressure canner you should beable to do both plus you have more room in it for cooking. Ya to me it seemed like the same equipment except just one had more precise dials then the other as well as a larger volume. Good explanation cleared up the really distinction for me.

I live in England, so if it's not safe in the USA, it's not safe anywhere! My digital pressure cooker just does things. I just wondered about the canning setting, but I'm English, and no-one here knows about canning. You are a special lady. Thank you!

I would love to own a ALL American canner but I have a smooth top range so that's a sad no go. I did recently purchase a presto one though.

Hi! Thank you for your video. I love my 941 All American and have recently canned 21 quarts (at one time) and your metal shelves reminded me of two questions I had for you: (1) what will/do you use to double or treble your shelf-space when stacking your pints and quarts and (2) what's the best method for preserving our canned foodstuffs in case of an earthquake? I've seen those plastic, molded carriers that Linda uses in her pantry but is that a cost-prohibitive method for the rest of us? I understand we cannot stack the pints and quarts directly atop each other (or I've heard on various channels: BexarPrepper and KatzKradul, I believe, but I've seen Starry Hilder do it...) What do you recommend? Should we restock our jars in their original boxes and use Bungie Cords around our shelves, wooden slats after securing the shelving to the walls...'just curious what you recommend. I feel the same Catharsis when canning quart after quart of food for my family, saving time, money and making things from scratch in minutes! I can meats mostly. Thanks, again!

a 941 is a DREAM canner!!!!!!!! how awesome! as far as earthquake proofing....I live in Michigan, so I dont have 1st hand experience since I do not live in an earthquake prone area....BUT I was just having this convo with a girlfriend of mine who lives in California!!!! She doesnt can because of fear of losing her jars. I gave her this link to check out....some great ideas! preparedldsfamily.blogspot.com/2010/05/earthquake-proof-food-storage-rooms.html I dont stack my jars......I am afraid to since Ball switched the rubber compound on their lids.....old time canners say they are not as good now. I am only 2+ years into my canning journey, so I go by what my elders say regarding this, so I don't want to add any extra pressure to them. I just stack mine in rows. i am almost in need of a 2nd shelving unit. hahaha I bought the one behind me for $80 at Sam's Club and it holds 800-1000lbs. It has worked wonderful thus far for my jars!

I understand completely. I love your phrase: "my canning journey". It really is addictive. I was describing how I've used my family's Hispanic heritage to great success as my aunts (tias) all, to a person, knew how to cook inexpensively but deliciously. I can quarts and quarts of pinto beans with salt pork that make luscious refried beans in seconds. I can pre-browned beef brisket chunks with dehydrated garlic, onion, salt and pepper as well as with chunks of onion and both serrano & jalapenos for a flavorful starter on tender carne guisada. I've learned to make my own huevos rancheros sauce that I use not only to spoon over quick-poached or fried eggs but as the base for dishes like arroz con pollo (chicken with rice) or just Spanish rice with the only thing that needs to be made fresh is the cheap & easy flour or corn tortillas. I lived in South and East Texas most of my life but since moving to the Pacific Northwest...I've found myself so hungry for authentic flavors. Thank you again for sharing your canning journey with all of us. I've also been canning for two+ years and I do stack my jars but between a stiff layer of cardboard, so the jars are not resting directly atop the others or in the Ball or Kerr boxes themselves. It's not as decorative as look at jar after jar of hard, but satisfying work...but they're not in danger of popping the lids nor if one did, since I cut only the plastic off the top...do I risk a large mess spilling everywhere. Daughter is moving out and she asked for my electric pressure cooker. I was thinking of getting a larger electric pressure cooker as replacement, but maybe instead I'll just look into getting a baby sized All American so I can cook in it but also don't have to drag out my big boy AA for smaller jobs.

It is not that they are not safe to can in... They have not been tested so no one knows. They have the Chard pressure cooker/canner 9 -1/2 qt. it cans meat ect. electric. look it up on google it has two pressure gauges. we are in modern day.

+Alyks Sdrawde you can use a Presto pressure canner on a glass top. You can use it without the lid as a water bath canner

IS IT WISE TO PRESSURE COOK AND OR CAN ON A GLASS TOP STOVE? A friend told me glass tops break or shatter. Has anyone have one and or tryed it.

call your manufacturer. Presto makes a canner specifically for glass tops. 🥰

no....because they cant continuously boil water at a rapid constant rate. but you can turn any stock pot with a lid into a watet bath canner. you need a rack for the bottom....and make sure it has at least 1 inch of water covering the tops of your jars .....but as long as it has a tight fitting lid and can keep a rapid boil you can just use that. an pressure cooker isnt designed to really do that.

How do you tell the temperature inside an All American Canner? I have a weight and a PSI gauge but no temperature gauge. That's for the info!

Hey William! My All American shows both PSI and Temp which is really nice! I like to see it at that 240 degree mark! Then, the weighted gauge jiggles, I can see on my temp gauge I am at 240 and 11lbs of pressure and I know I am at exactly the right spot I need to be at! It does say on my temp/psi gauge that it is a "geared gauge". Not sure what that means? But it does show both! :D Hope that helps!

I got nervous when I first read the title. I was thinking "Oh great... I just spent eighty bucks on this presto pressure canner/cooker." Now I'm a bit relieved. The thought of an electric pressure cooker makes me nervous.

Someone that we both follow, and that I have trusted and admired for her recipes, has a video on canning with one of these. (Another one of my "go to" ladies that I trusted explicitly does cheese too.) I was shocked and disappointed. It almost seemed like a paid infomercial. Lots of comments of people saying they are going to do it too. Not this Michigander. How do these companies get away with it?

*deep sigh* i dont kbow how they do it...... it should ve a crime. how can you false advertise on sometging as serious and important as this? canning it wrong can kill us!!!! not to mention swindle folks out of hard earned money.....they think they are buying somethi g they can cook and preserve low acid foods in.....like taking their money and running! ugh. its just so wrong!!!!! i like my pressure cooker xl....but had i 👌 own about their shady ways i wouldnt have given my money to them. i trusted qvc too....to vet these sorts of things!!!!!

Those people should take those videos off. I just checked and I know one of them is still up and still giving bad advice. I won't watch her channel anymore and yes it seemed like an infomercial.

I have the same canner but the sounds it makes is just scary. Love the electric pressure cooker .

go to google. then type in columbiaville mi elevation. you will see a white box pop up on the first line! :D your elevation is 771 :D

Pressure canning scares me . My husband does the canning and I help. I guess I just need to take baby steps .

whats your biggest fear? the canner exploding or dying of botulism? hahahha i had both before i started. hahahaha so i completely understand. but.....if you get a great canner and follow the steps....you will be golden. i absolutely love it. its addicting. hahaha

Please don't be terrified. It just takes some getting used to. I was too but it's SO worth it. Like our wonderful Kneady Homesteader said, it becomes addictive...especially when you have great results for your hard work. I learned from BexarPrepper, Misty Prepper, Linda's Pantry, Katz Kradul and OurHalfAcreHomestead. All great folks with awesome videos. I started out with an $85 Presto 7-quart or 10-pint canner from Weasel World (WalMart) but soon found that the biggest All American was the best bet by far for my two ravenous teenage boys, Christmas gifts, fellow-prepper family members for trading my meats for their veggies and fruit.

My favorite rule of thumb: You can pressure cook in a pressure canner. You can not pressure can in a pressure cooker. I love my Pressure Cooker XL. For pressure cooking, slow cooking, rice cooking, egg cooking.... for pressure canning? Nope. Nope. Nope.

I pressure can on my glass top stove and have no problems. I use the Ball waterbath canner for waterbath canning.

+rakesfunnyfarm Look in your manual. It will tell you if it is safe. I have been doing it for 3 years now and never a problem.
