If you add your flavoring and coloring after you bring your candy to temperature you won't have to worry about the color changing

Does the sugar melt ,Or does it stay hard ?

Eventually, the sugar breaks down.

Your thermometer doesn’t look broke. I’ve dropped mine a million times it goes right back together usually, I personally think that’s a little too much water and karo just it’s going on fruit want candy to stay hard long as possible and karo can interfere with that. It cooks perfectly fine on 6/7. No thermometer shouldn’t touch the bottom but doesn’t always 100% give inaccurate reading. Silicon mats or parchment paper sprayed with nonstick spray is your friend. The candy can burn through those styrofoam plates. Good luck on your channel you’ll get there 🙂

Sooo what about them leaking??? Because pineapples hold a ton of water so once u refrigerate them wont the candy slide off because of the water in the pineapples?

Yes, they will melt/slide off after a certain amount of time, but I am trying to find a way for them to last longer. In the meantime, they are good if you were to make it for yourself.

Store in the fridge. They will not last more than 24hrs there is no hack. Candied fruit are meant to be eaten same day

You have to freeze your fruits solid before dipping them. Dip frozen. Never dip room temp cause the candy will not stick

I’m learning as I go. Which I did learn that you are supposed to freeze the pineapples overnight.
