Unless you're a fan of chicken jerky I'd suggest that you grind the chicken, treat it like you do ground beef, then dehydrate it. I'm not a fan of dehydrated chicken in chunks. The ground dehydrated chicken is much better IMO

I find them pretty good right out of the jar as is so I won't be grinding it but some may want to follow that advice :)

@@RainCountryHomestead the flavor of the chunks or slices is quite good but I have issues with my jaws and end up in pain so gnawing tough stuff is out. Whereas the ground to me is way more versatile and handy to use because you can grab and go with very little or no soaking time needed before use

I was lucky to find a large food saver canister on Ebay. I used it for the first time yesterday. I may be wrong but I believe it was on one of your videos I learned about using it with a break bleeder.. I dry canned dehydrayed lemon and orange slices. TY

I am saving seeds from anything I can and lots of them, so I have extra. I want to have enough for a few years and to share. I have been drying them between old dehydrator screens outside. It is dry and hot here, no power needed to dry seeds.

I typically can "ingredients" as opposed to "meals." But I've been playing with recipes for some coldpack soups and stews this year. I've done both beef stew and bean stew, since it's the same processing time. They've turned out great. I don't blanche anything before preserving, canning or dehydrating. I see no need for it. It's extra time and ...time... and I just don't have it. The dehydrated vegetables merely need a little more time in the soup or stew to reconstitute beautifully, even the carrots. A Cordon Bleu-trained chef couldn't tell that veggies in my soup had been dehydrated... I'm giving a hand-on presentation this weekend at our church on preserving foods. Pressure canning (only pints b/c of time constraints), dehydrating, fermentation, vacuum sealing (with brake bleeder, of course), freezing. Mostly men are signed up. 😃 I'm going to start some raisin vinegar to keep on the church refrigerator, then we can use it on our salads during community meals! It's heartening to see the new interest in food preservation sparked by crazy 2020. A small silver lining. Best to you and Mr Rain!

I agree on the canning ingredients over meals, normally that is what I do so I have versatility but while I am canning mode, I do like to have a few meals canned up for emergencies, especially now with how busy things have been for us. Also, I am trying to make more room in my freezer and we have a LOT of ground meats (beef, venison, and elk) so not only am I trying to make room in my freezer by getting some of that out, it is also nice to have it put up shelf stable in other forms besides just ground beef. Cannot take dried ground beef and make meatballs from but if I forget to thaw out ground meat for that, it not only saves me time to have some already made and ready to go, it means I do not have to freak out when I forget to get the meat out in time. :)

@@sherryk30 Yes, he does when he is able. That is where we got a lot of the meat we have put up. The beef is from a side of local grass fed we bought years ago

I bake my sweet potatoes first, then peel them, cut into chunks and pressure them. The taste is superior, I find.

I don't can.....as of yet! I do freeze and vaccum pac into jars. I can't find anymore iars so I store bags of beans and pasta, rice, barley and so on in the original packaging in 5 gal buckets as you suggested. What a time safer, and jar saver! I started watching prep channels in march, by May I was looking for jar sealers and had a hard time getting them. I did order 2 sets of large and small. Idk if I'll use them all but I have them. Thank you for all your videos. I watch them all.

I wanted to thank you. I've been harvesting and dehydrating herbs from my first culinary/medicinal garden. The other day, I filled a quart canning jar with dehydrated herbs and I vacuum sealed the lid. I told my husband I would have never known how to do that if it weren't for you. I am growing Winter Luxury pumpkins for this first time and I cannot wait to taste and can them!

Those pumpkins usually do well for me. I grew different one this year, the New England pie pumpkin. I would have got more if our weather had odd but I did get some. They are much smaller than the Winter Luxury pumpkins but I also wonder if that may be this weird year we have had

dehydrated sweet peppers work great for pepper steak as well. i dehydrate lots of sweet peppers for every use.

Love sweet potatoes canned, I dehydrate ground beef all the time, add it to dehydrated spaghetti put into jar or mylar bags as pre made meals to take camping, or anytime,

i take my dehydrated vegtables and grind them into powders that way i can add them to what ever i am cooking,, as drying the chicken my little dogs love their chicken snacks,,great video

@@RainCountryHomestead for the greens i just put them in a 1gal. zip lock bag and crush them, i do the same for fire roasted chilis and fire roasted tomatoes,, all other vegtables get a pass or 2 through the grinder, it works wonders when you only cook for 2 little dogs and their boy [ me ],, great video this morning !!!!!100000 thumbs up!!

@@sherryk30 it is just me and 2little dogs, i,m 56 and been doing this since i was 10 years old, never been married it,s either cook or go hungry, i refuse to eat fast food, my mom and grand mom taught me the basics as making jam and jelly, pressure canning meats and dry beans, and grand dad taught me how to salt smoke and dry meats as well as hunt fish farm garden, he would always say some day one will need to know how to do these things.. have a BLESSED day

I'll be looking forward to your video on using and sealing Mylar. A shortage of jars is the reason I bought Mylar. I did get some regular mouth jars at Meijers today in Michigan. No wide mouth. Beggars can't be choosers. Snapped them up quick. It's a scavenger hunt every day.

I chop peppers and put into small sandwich baggies and then put the baggies into a larger plastic bag to make them easier to find in the freezer plus its double protection. I never dry any seeds I'm saving in the dehydrator because I'm afraid the heat would kill the seeds.

Pressure cook the chicken prior to dehydrating it. Helps a ton.

Like you I was kind of wondering how the chicken would rehydrate. Ground beef does great. Still the chicken I decided to put in my small pressure cooker, bring it up to pressure, turn it off and let it soften up under the pressure. It did help. I probably won't dehydrate a lot of chicken but small amounts are worth it. If all else fails and we have it, I can grind it to powder and add a little into meatloaf or soup, to up the protein. I think my favorite way to eat it is as chicken jerky.

It gets hotter than blazes here too. I took a tip from MIGardener (KZfaq) and planted really early. When that crop was stressed and done along with the bush beans, I pulled them out and replanted switching each from where they were before. They each are doing beautifully and I'll have a second crop. That's a first for me and I'm loving it!🙂

I read about pressured canned chicken for dehydrating. I wonder if you used a steam juicer to cook chicken might also work. Guess I'll have to try it next time Ido steam chicken & vegetables. I love these because I get chicken, vegetables, & broth. God bless.

I have watched several back packers doing dehydrating for their meals. I found videos where they have said that canned chicken dehydrates beautifully. They had the same problem with just cooking chicken and dehydrating and it turning out tough. Another guy said if you cook in the instant pot and then dehydrate works very well. I have not tried it yet, just thought I would share what others have suggested. Maybe someone has tried it and can share their results.

I came across something a week or so ago that said pressure cooking the chicken is the key. Pressure cook it before dehydrating and it will be much better when rehydrated.

If you check out one of the videos I linked in the description box, I do show a lot of the process. I never shoot videos while I am canning as it is just too much of a hassle while trying to hurry and get it done but I will take clips and photos and them put them together in a video later where I explain it

I see you leave your rings on your jars. I am seeing that you should not leave your rings on as you can detect botulism if the lids pop off. I would like to know your thoughts and what should you leave lids on and what should you take off?

Speaking of beans, you mentioned in a video that you make Mr. Rain a pot Tar Heel beans. I believe that you said you had to learn to make them properly... Can you tell us what that is exactly and how you make them?

Basically just soup beans (pinto beans or navy beans are often used) with salt, pepper and some spices. Some add collards, I add my dried mixed greens blend, onion, and garlic. Also some cook them with hamhocks to add that flavor. Then you serve them with or over white cornbread

Haha! Well, I do not know everything but I do appreciate that :D Anyway, yes, the other jars are safe to use, there are just different variables that can cause breakage. How cold the items were in the jars when you started canning them and if the canner heats up quickly can cause that to happen or maybe that single jar was defective or had invisible microcracks from being knocked around some. It just happens from time to time. It is frustrating but does not mean the rest of your jars are bad.

I would love to do canning but am very intimidated about doing it. So afraid of making myself or family sick from not doing it correctly. So I've been dehydrating stuff instead. Great information though.

I'm wondering how to preserve the excess banana squash my garden is producing. I picked the first one, because if it had gotten any bigger, I wouldn't have been able to lift it. I'm sure it was upwards of 50 pounds. I'm out of freezer space, so can I put it in jars? Can I do water pack canning? I don't have a pressure cooker. There are at least 7 more out there! Help!

While many people still do water bath canning for low acid foods, it does require 3 hours of boiling. Otherwise, they must be pressure canned. However, most squash can keep for months in a cool, dry area without refrigeration

Heidi I would love snow pea seeds, have never grew them here, do you think they would do well here in the heat and dry? We do pink eyed purple hull, but my husband loves the snow peas, so would like to grow them if they could survive extreme heat and very dry. Thank you lots of great info, blessings

Snow peas prefer cooler, damp areas so they would likely shrivel up there before putting out much. I have tried purple hulled peas here and they did not do well because it is too cold.

My husband likes snow peas, not me, but thought if it would work, I'd grow him some. Thank you for being honest and giving me good advice, I value your information, blessings

TennesseeGirl , I live in northern Indiana. We plant snow peas very early so we harvest them early June. Check to see if planting them earlier would work for you.They do not do well in heat.

Do you have to cover the meatballs with water before pressure canning? Or do they just make their own juice and you don't have to worry about them being under water?

This was my question and I am going to be canning more up today. Seems to me they would make their own liquid but everywhere I looked when seeing how other people did it, they were using broth or water. I am thinking of taking one jar and not adding any water at all to see what happens. If it does not make its own broth, then I will simply use that jar up first.

@@RainCountryHomestead I decided to just give it a try with broth tonight. They're still cooling on the counter. Looks like it will work well to make a gravy with the beef broth when it's time to eat them up. :) Let me know how yours turn out.

Hello rain country, love your channel, just found you this year. I’m a total newby to food preserving. Since finding your channel I now understand why my grandmother had jars & jars of preserved fruit 🙂. So I don’t quite understand how the sweet potato canning works? Is that water bathed? Is it really soggy? Is the food technically cooked in the jars? Can the canned sweet potato be roasted? Or canned potatoes be roasted? Sorry for all the questions. Total newby here, but want to learn it all. Thanks for any help or advice. Cheers from Melbourne Australia 🙂

I raw packed the sweet potatoes and pressure canned them for 65 minutes. As I said in the video, it was my first time so I have not tried them yet. Some people cook them before canning but I always raw pack everything. The sweet potatoes will cook in the canning process so really, you can use them however you want once you open and drain them

I do not go by temp, I go by pressure, 10 lbs pressure for pints for 65 minutes

Not exactly sure what your question is about that but if the casserole has noodles in it, many would say you should not can it.

If you mean the Coastal store, do not know for sure but I know they sell a lot of US made products. Mostly we just buy the organic chicken feed there though as we only get a chance to stop in there 2-3 times per year

Several reasons: one being that I got tired of replacing them every year, am trying to get away as much as is possible from storing food in plastic, and also because those bags are not cheap

That may work. Another mentioned grinding it AFTER it is dehydrated and using it as a powder. This would be a good idea and the more I think of it, the more I am liking the idea

I do not like a product that routinely stops working after only 2 years of use. All four of mine have bit the dust in that time. The last one I have still will vacuum jars but does not vacuum or seal bags.

Why would you get rid of your food saver? We are eating meat 5 years old that tastes awesome that was food saver processed and then wrapped in white freezer paper.

Why keep it if it does not work? I had thought I explained that in the video all of mine have worn out within two years. Well, except the very first one, that one actually lasted three years before I wore it out. Also, I am trying to get away from plastic as much as I am able, though it is not entirely feasible and now I am having to resort to ziplock and I am tired of paying good money for machines that do not last

@@minihomesteadcooking Cured basically just means allowed to dry for a period of time before putting into cold storage as is. So yes, they are fine as is
