That looks so good, but those are considered "salad" kind of tomatoes because if you make a sauce out of it, it will be bit too watery like yours.. i would suggest you to cook that sauce for a very long time to not waste it, but the "san marzano" variety would be the best for tomato sauce (it's just a tip, you did a wonderful job anyway)

Thanks for the tip. I have the same issue with store bought tomato's and I'm unable to grow my own atm unfortunately. If you're stuck with store bought any recommendations? I can never get my tomato sauces to taste as rich, no matter if I cook it right down, add plenty of tomato paste, balsamic, I've tried everything. They never coat pasta the same or taste as rich and I can't figure it out so I thought I'd ask for suggestions as you clearly have it down to a science 😂 hopefully you have some ideas. 🙏

​I sure wish I knew and that maybe someone who really knows will leave a reply. I dont believe ANY store bought tomato will be up to par taste wise, since the biggest rule of tomatoes, Do Not Refrigerate is broken with their storage and shipping. It automatically sapps the flavor and texture once they have been Refrigerated ❤

@cececox6399 bruh i just saw this comment, if it can still help you i personally recommend just a few ingredients: either a base of garlic and onion or onion,carrots and celery. For both versions you chop the veggies pretty finely and then you cook those in a pot with some good quality olive oil for like 5 minutes before adding the tomato sauce with some basil and salt. I let it cook on a very low heat for like 3 hours or so and I stir it a few times during this time, if you find it too acidic and prefer sweet tomato sauces add either sugar or just a touch of baking soda while it's still boiling.

Try making it with Roma tomatoes and cook it down. Looks very good. Love your technique.

Этот рецепт для тех,у кого времени дохрена 😂. Я варю проще- перемолоть на мясорубке, отправить в кастрюлю варить минут 15-20, добавить соль,сахар, (можно добавить чеснок,острый перец, но не обязательно)довести до кипения, залить в банки простерелизованные, закрыть крышками, перевернуть вверх дном и укутать теплым одеялом. Как останут - убрать в погреб. Прекрасно хранится без дополнительных стерелизований и кипячений.

Yes. Lemon juice for acidity. You can also use citric acid. Needed for canning tomatoes since not acidic enough.
