I saw someone say on a canning group "You can waterbath can a cowpie and it will seal, doesn't mean its safe to eat" Made me laugh so hard but it really is true. People think just because it seals its safe.

I have put flour in a brown lunch bag then vacuum sealed it to make it last a while longer. The bag prevents the flour from being sucked up into the sealer.

I put my all purpose flour in the freezer for a few days first. Then I let it come to room temperature completely before bagging it and vacuum seal in the plastic bags. I store them in a dark tub in the basement. I freeze it first to kill any bugs/eggs. Discusting I know. But flour does have bugs. I have the large cans of thrive flour too. That's really my long storage. The other I get through in a year or two.

Concerning "just because you see it on the internet doesn't make it true". I saw a lady pressure canning cube steaks after dragging both sides through flour then browning it. She packed it in jars, added some spices and broth then canned it. Not someone I follow but I did make a comment letting everyone know, you're not supposed to use flour when canning, it's not a safe or an approved method. I love your videos; you've taught me a lot about canning. Alaska Prepper is correct, you are the canning queen! I know this doesn't have anything to do with dry canning flour! HaHa

I put bags of flour in a plastic bag and store those in Sterlite bins in the basement (we have a dry basement with no insect or rodent issues). I have never had flour that has gone bad. What I am using now is 5 months past the best buy date, and it is still good.

I have been experimenting with it. I created flour blends in 2020. There were sales where 5 pound bags of all purpose both bleached and unbleached was 15 cents a bag. I stocked up and experimented with it in 2 cup portions. All the recipes that I use which need flour are 2 cups. I have them portioned a variety of ways. I froze then defrosted some and used bay leaves in others. I found semolina flour on sale and stocked. I purchased bread flour on sale. This was back when everyone was concentrating on toilet paper so they missed the sales on flour. When I feel like serious baking, I pull out flour from different methods and different types and bake them up using the same recipe for comparison. I have not had a problem with any of my packaged methods. For vacuum sealing bags and mylar bags, I put the flour in paper lunch sacks to save my machine. I did not pressure can any of it. I do have it in different containers. And since then I have gotten a bunch of whole wheat flour for free to keep adding to my flour stockpile.

Thank you for putting this video together, Leisa! When I first started cannong, I viewed one of those “Dry canning flour” videos. I thought, “Oh, that’s a cool idea”. Then I remembered my mom never did stuff like that, and she was very strict about canning, preserving, and storing food safely. Asked a friend who’s been canning a long time, and she told me to stop watching nonsense like that video, pointed me in the direction of proper reference material, and to ask her if I had questions. Thankful for folks who share proper knowledge ❤

I commented on another persons live, that I had put my flour in a paper bag (4 cups per bag), vacuumed sealed in a sealer bag then stored in my freezer and have been using it for just over 5 yrs, they pretty much called me a liar. I have it several ways because I was experimenting at the start of the pandemic when I found good deals on different types of flour. Flour was $1.15 for a 5 pound bag and many stores had an electronic coupon side $1 side each bag so I went overboard as I usually do. Brown bag it into a portion that you normally use and put it in mylar or vacuum sealing bags and seal it up and it stays good. Everyone else was concentrating on toilet paper and missed some good sales.

I’ve vacuum sealed my flour and kept it in my freezer and some in fridge in garage. And have a little in pantry. I have my stuff sealed airtight the very best I know how and with what I have space for which I keep finding more room for food. Rearranging over and over and find more room. I try to follow the correct methods. Safety. I keep nuts in freezer in vacuum sealed bags.

I've been needing to know this as , My husband put a big 35 pound bag of dog food and within 2 weeks We we're noticing moths coming out of our big pantry , He went to open the bag 1 day, and omg, it was loaded with moths, He threw in out right away , but I was worried about my rice , flour, etc . We had to throw a lot away, sadly . Now my oldest son bought us a freezer saver and looked up to freeze even flour from the grocery stores ... I'm listening, sweetie . .. Mrs josette Tharp Montgomery County, Texas This was food we bought alot cheaper , and now we are re- buying at the higher prices , Even a 25 pound of Rice we got at Sam's - I need to put in those freezer saver bags , 🙏🙏🙏🙏♥️♥️♥️♥️

Great info! I store my store purchased flour in Fridge & freezer & have Wheatberries to grind my own once those are empty. I agree the texture & taste of home ground wheatberrie does take some used too. Hubby doesn't care for it so as long as able to purchase I make half & each & he has no idea I am doing this so I am weening him into it. For more than 1 cup I double the home ground with store bought until says to stop but I really think he will not know. He is more of a visual over taste, once he gets it in his head & won't even try something different, little does he know I cook mostly by scratch & he has been eating items he says he doesn't like yet he goes for 2nds! Thank you

Oh yeah, Texas here. It’s been miserable in this heat. I did all of my canning from 4AM to no later than noon. I managed to put by 55 pints of diced tomatoes and 28 quarts to tomato sauce, all from my garden, during the early morning hours. Also my beans, and corn! I also bought as many mushrooms as I could find (I hit the 50% markdown each Thursday at my local store) that looked good, and got those canned up too. All in the early morning hours. The hot afternoons were nap time this year. If there’s a will, there’s a way!

hi Leisa. I live in Florida, so there is no cool dry place for storage lol. My favorite way to store flour is to put it in a brown paper bag with an oxygen absorber. I usually do 2 or 4 cups in a bag because I cook for 1 and don't usually need that much flour at a time. I roll the top of the bag down really well, then I vacuum seal it shut. So far it seems to hold up pretty well doing it that way. I have had flour bugs in my pantry. It is a nightmare to get rid of.

If you put the flour, rice, or other dry goods in the freezer for 48 hours, it will kill the eggs/larva. Take it out of the freezer, bring it to room temperature. Put it in glass jars with a couple of bay leaves. I have not had pantry moths or weevils for 30 years following this process.

It's all pictures for the settings, so I've been spending a lot of time looking at the owners manual (thank goodness the seller gave us the manual). The manual for this oven actually has a whole section on using the oven for "preserving" by oven canning. How bizarre. I wouldn't do it of course, it's just interesting to me that it's got instructions for it.

Wheat berries that you grind are 100% whole wheat. Whole wheat that you buy at the store has the germ and ~28% of the bran removed. Tip: Whole wheat absorbs more water than white flour, and it likes warmer temps to rise. ALSO, knead it like it owes you money! Yes, wheat berries are the way to go for LTS.

Don't vacuum seal. Just put it in an airtight container. If it bricks up, add a piece of bread

Thank you for doing this, there is a Amish channel that does dry canning and all kinds of other unsafe methods of canning . I wish we could take it down from the internet .

I am allergic to many different grains and I grind my own flour from rice. How long would rice flour last in a jar? I keep it vacuum sealed, but I bake with it often enough that it doesn't go bad.

You're better off storing rice and making flour as needed

Leisa, Do you have a hand grinder for your wheat berries? I would like one but the ones I’ve seen have had poor reviews when it comes to grinding wheat into flour because they don’t grind it fine enough for baking. If you have any experience with this I’d love to hear it.

I canned 6 1/2 gal jars of all purpose flour in the oven in 2021. My rotation is now around to those jars. DO NOT DRY HEAT SEAL FLOUR! It does not extend its life. It still will lose its flavor and taste stale. It becomes more needy of moisture when you cook. It's not SUPER bad. It is just not the same. My vacuum sealed and my mylar bags with oxygen absorb worked lots better. I am trying to work through this 25 lbs of heat sealed flour but probably will throw it out.

Lisa I bought flour from the mormon canary and it has a ten year shelf life. I opened it at eight year and it was bad. Sealed in # 10 ca. It smelled horrible and it was stored in a climate controlled room dark 65 degrees .

So you can’t put flour in a food grade bucket and put oxygen absorbers in it? That won’t work either? I could have swore I have seen other preppers say, to do it this way and it lasts for years.

I am not sure who you are refering to. But the point i took from it, IS: it kills off weevils, moth eggs, etc. I have many times, i brought home store items, just to have gypsy moths hatch and spread in my cupboards. I had soup mix beans, in a jar in cabinet? Worms hatched IN the jar. The difference IS, heating the items in dry jars. As for jars heated in oven? I do it that way, FOR my Hot Pack canning! But i am not promoting Oven Canning. Just saying about the bugs. Flour keeps going bad on me, in any method. I get most milage by keeping in the freezer.

Dry canning without the lid on, then sealing after brought to temperature for proper length of time...there would be NO MOISTURE. and NO WEEVILS. Freezing, upon thawing DOES produce moisture, which can lead to problems.

You can find manual grinders fairly inexpensively if you can grind by hand. If you happen to have a Kitchen Aid stand mixer, they make an accessory that will grind flour. But yes, like many other things, a grinder can be an investment (same is true for pressure canners, jars, lids, even buckets with gamma lids).
