I think you are very positive and hardworking lady. I don’t think this is easy making a video with kids and everything around you, however you seemed very focused to show us the whole process. Good job and thank you ma’am.

Lemon Zest is an excellent accent flavor to blueberry muffins, I found the hand-held potato peeler gets the thinnest zest and it was SO EASY compare to a grater or knife. 40lbs. of lemon preservation by hand I was looking for the simple way to get my zest (my wrist was about to be broke I've got the exact same lemon juicer you do right down to the same color.

I'll pick several gallons of black berries and elderberries in the woods each yr - Ill can them as an extract or cook them down from a gallon and a half to a half gallon - I found it's better to blend them into a slurry first then cook them down - If you want the Berry's in tac don't blend them - I just use them to make juice through out the yr not for pie filling - so I grind them up and make them into a extract -

The heating is to pasteurize the juice.

For many canning recipes, heating something up is to get it to the same temperature as the water in the canner. Hot water and cold jars will cause breakage. So either everything needs to be cold which can take longer, or everything needs to be hot.

You can shave off the lemon peel with a potato peeler before squeezing the lemons, dry in a dehydrator and powder and use as a powder

A year or two at peak freshness, but canned food does not really go bad...the flavor can change over time though. If it is sealed it is most likely edible

How do you make lemonade out of your canned juice?

Hi, I was trying to do some research. I thought I might get your opinion. I just squeezed a bunch of lemons into a strainer that was sitting on top of a plastic picture. When I was done, I poured the juice into a glass mason jar and put it in the freezer for now. I noticed the green plastic pitcher was now longer see through, and when i went to scrub it clean, that film that the juice had left behind was not coming off when scrubbing it. I immediately threw a way the pitcher , but now have my doubts about using the juice for lemonade. I am concerned about the citric acid might have melted the plastic a little and may now have contaminated my juice….any thoughts on this???

What I generally do is squeeze the juice out, then I'll take a gallon and a half and cook it down for several days over a low fire about 180° - ( These days I use a InstantPot pressure cooker and set it on slow cook) - It's Heather to use a gas burner stove - electric stoves, electric pressure cookers, microwaves & induction stoves destroy the polyphenols in food - that's why the military no longer used microwave ovens and induction cookers to preheat food in the field - It caused field troops to suffer malnutrition problems when food was preheated with microwave's - I'll take the lemon juice and cook it down from a gallon and a half to a half gallon - it becomes black like tar and real thick - often I might add another gallon as it cooks down - After it cooks down real thick then I'll can it - although it's of a dark color when it's diluted it taste the same if not better - I live in a rural area in the deep south and at times neighbors give me entire trees of those large lemons or pairs - So I might wind up with 4 bushels of limons or pairs now and then - I'll take some of the limons and grind the skin and all and cook them down also till it's thick and can them also - If you live close to sea level it takes a few days to cook the juice down - I'll generally freeze the juice ect - then cook it down daily till it's all canned - For long term storage it's better to use Harvest Guard reusable plastic canning lids - you will have to master using plastic reusable lids - they often don't seal on the first cook - Reusable lids are far better for long term storage they don't rust out - I've used them 40 + yrs - The shelf life of canned goods is indefinite -

@able880 Жыл бұрын
@@harsimran1 I won't be doing any videos I don't think - as for books - there many books on what I do but the problem is they have been out of print for 100s of yrs - If you pick black Berry's if you pick the ones off the ground first till you have a half gallon then pick the ones on the bushes - that can be a life savor - When you pick black Berry's off a bush there often large wasp nest in them - if you don't remember to stir the bush to see if they have wasp and just start picking - The wasp will sting the life out my hand - in that case I fill fill my mouth with black Berry's and i chew them and the pain of the wasp sting will be gone in minutes - The blackberry's just do that - that's in books 200 yrs ago - my hand will be swelled for a day - I go back to picking after a few minutes when the pain of the sting is gone - As a kid I cought cotton mouths - old guys gave me a silver dollar for large cotton mouths - the swamps were full of snakes - When I was struck at times I took the black berry extract and filled my mouth and swizzled it in my mouth for maybe 10 minutes then swallowed it - then I did it again till the bite pain was gone - then I had a mix of clay and black berry extract in a jar that was real thick like a paste - I put that on the bite and left it bandaged up for a few days - my hands or knee might swell for a few days but the pain was gone lol - I know it worked the four times I was struck - That was 60 yrs ago that I spent my day in swamps catching snakes lol - my dad was born in 1912 so he knew many of the old ways - My grate grand father was a drugst so my grand father and his brother Roger had to pick Berry's and leaves that herbs were made from for there dad - Today we eat the fat in meat in the 1800s fat was for making soap - today people eat fat and gain weight also they wind up with high blood pressure that is partly due to ingesting any kind of oil or fats - Only butter that has not been burnt should be ingested - all oils were for the skin or hair - or making soap - They knew that for 1000s of yrs - Lol

Is this a USDA approved recipe? Canning can go really wrong, and I love to see the recipes in case of changes. You might also want to consider having a microphone, or having your camera closer to us hard of hearing folk can hear you better. I've considered canning juices so this is helpful.
