I make a similar meatloaf for canning. When my beloved dog was suffering with cancer, canned meatloaf was the only thing he wanted to eat💔

I have made this and love it! Thank you. Due to the ideas you gave me I also made taco meat. Mine was with ground chicken. I’m going to share it here. It was you that inspired me! Canned taco meat 6 lbs of ground chicken or ground beef 1/8 cup or more dry taco seasoning 1/8 cup Goya seasoning you used 1/4 cup brown gravy mix you used 1cup broth 1 cup taco sauce or salsa Cook meat in a large pot til almost cooked. Add seasoning. More seasoning if you want. Add broth and salsa. I pressure canned for 90 minutes. I can’t post picture or I would. I used ground chicken and it’s a beautiful red orange color.

Good video and the meatloaf looks delicious. There are 16 tablespoons in 1 cup. So, your ⅛ cup is 2 tablespoons and your 1/16 cup is 1 tablespoon.

Meatloaf, mash potatoes & gravy and greenbeans are my favorite meal. When we go to Golden Corral that's what I put on my plate first. It's what satisfies my hunger. Glad you did this. I have a lot more beef to can. :)

When my husband and son had to on a trip I sent one of the meatloaf jars along with some smaller hamburger buns, in Tupperware the sliced tomato, onion and pickle and condiments. It was great for them to stop at a rest area during COVID

Gravy has flour in it. Sutton’s daze said not to add any carbs such as bread crumbs rice flour. My wife wants to do this but has not yet

Sutton daze is correct. I think pressing ground beef together to can might also not get up to temp and pressure long enough.

Lots of people use gravy powder with no adverse effects .. use just straight dehydrated beef stock instead if you are worried ... Also if you are worried it will not be cooked in the middle (it will be, but if that's all that is stopping you) then press the meat into jar then make a hole down the center that you can then 3/4 fill with a tomato sauce/brown sugar sauce or what ever sauce you are happy with ... Plus never go over a pint in jar size..... Only can food you feel safe eatting or you will just waste it

You're correct. You should not can meatloaf at all...either ground beef cooked until all pink is gone so it doesn't make one loaf of meat(they say tit doesn't process right with the solid meat) or you can make meatballs with it. That's the largest that's approved method. Also not flours, pastas, etc. There's alot of seasonings that's not approved. Be careful. Research what's approved and anything else isn't "tested and approved" and is at your own risk. Just be aware of this and do what you're comfortable with. Me personally, I'm not comfortable risking it.

Looks delicious! One suggestion is to ditch the gravy powder (look at the ingredients) and add your own umami flavor by pulverizing some of your freeze dried mushrooms (or get mushroom powder) and add some nutritional yeast. You can find ratios online-search for beef bouillon recipes. Maybe add a bit of celery seed, but otherwise, you already have the spice. Much healthier pairing with the rest of your ingredients. I’ll try this!

You can make lunchmeat like that too. I just chop my meats and press it into the jar on same canning time as meatloaf.

Thought I wld share the recipe for my meatloaf (for variety). I use 1 - 1.5 lbs ea of & ground beef & sweet/mild Italian sausage. can of Italian diced tomatoes w/basil, oregano, garlic. Italian breadcrumbs. 2 eggs, Italian seasonings. onions, bell peppers. Sometimes I add Ragu Garden Combination to the mix & when baking, I pour some on top as well. I will have to give your recipe a try. It also looks & sounds delicious. Thanks for sharing your recipe & the instructional video. I'm new to canning so I'm watching videos for instructions & great recipes. Variety is the spice of life!

How much did you pay a lb. for your 90/10? I payed $2.50 lb. for 80/20 ground chuck last week.

I buy 1 or 2 of those any time they're on sale, keep them in the freezer til I have time to can it up!!

@@joanlong4183 a little less than 3 dollars a pound. I picked it up at Sam's Club about a month ago. Was going to make ground beef jerky out of it, but I like the meat loaf recipe better! Walmart usually runs well over $5.00 a pound for 93/7, IF they have it.

I have canned meatloaf. My mixture is different than yours. I add crushed saltines and well beaten eggs . I just filled the jars and canned it. But, I didn't care for how soggy it turned out. So I currently put the filled jars on a cookie sheet and bake it first. Then I wipe the jars carefully, put on the lids and then can it. We loved making meatloaf sandwiches while developing our last homestead. I also like to make a topping for my meatloaf. I tried canning it with the meatloaf but didn't care for the results. So I just mix up the topping and place it on the meatloaf slices taken out of the jars of canned meatloaf and bake it in the oven for about 15 min. It's a great way to store meat 🤗

I baked mine in 1 1/2 wide mouth jars because we still had three children at home. I now use wide mouth pints. I just baked them until they were done or close to it. Then I canned it. We used our venison but if you use regular beef hamburger you might need or want to drain of excess melted fat depending on how lean it is or isn't.

I put a little, not a lot, of Italian seasoning bread crumbs and a bit of sweet baby Ray's in mine. No beef stock. Seasoned to our tastes of course. I can it in pint jars, only 3/4 full. I put a TBSP of sweet baby rays on top. I use a fork in each jar, to push some of the bbq sauce down the sides, and, to spread it evenly a toss the top. Because I use 93% lean ground beef, there is almost no fat at all. We all love it. Maybe to much. Theres none in my long term. The fellas pop out open, and nuke it in the jar, and, eat it out of the jar.

You could also Can potatoes separately to add to the pantry. I wonder how this would work with ground chicken or turkey? We don't eat beef. Anna In Ohio.

8 months have passed since I made this the first time, I'm down to my last jar, time for another batch, but only doing 5 lbs because the cost of burger has gone up so much, it's double what I paid 8 months ago thanks to inflation. Once again great recipe!

Thank you so much for this recipe. I watched several and yours was the easiest and most sensible. Canned 7 pints yesterday and opened one for supper.. Hubby gave 2 thumbs up! Bonus was your suggestion for "onion mush" lol..made more than I needed and dehydrated the leftover for perfect onion bits...no more tears from chopping as I dehydrate lots of onons!!

This looks like an amazing quick supper for a working family. With instant mashed potatoes, or even potatoes "baked" in the microwave, a salad some veggies and a roll or two is a feast. I would be afraid it would spoil. The gravy mix has wheat and soy in it.

I was thinking the same but at the end the broth was clear. With the gravy mix I thought it would be cloudy and thickened? I know canning starches is a no no but... ♥️👍🙏🇺🇸🤓

I think I would skip the gravy mix, tbh. Add onion soup mix in place of the adobo, add some extra onion, call it a day. No questionable ingredients.

Well, I guess I'll be canning some meatloaf! My husband loves meatloaf. But, after all the canning I never thought to can THAT. Hmmmm I don't know why I never have.

I never even thought about canning meatloaf or similar "main entrees". I'm single. No meat eating kids. So, making entrees just for me is difficult. I watched this video the other day. This afternoon after work I'm canning 9 half pint jars. Next up will be stuffed peppers. Thank you for the great ideas!

That looks delicious, and convenient. However, Rose Red Homestead, a food science professors's youtube channel, says canning dense foods like meatloaf, gravies, and thickened soups might not allow the center temperatures to get high enough to kill spores.

Rudy...I thought that your not supposed to use any kind of flour or cornstarch products into your canning? because it prevents it from heat heating throughout or something like that and the brown gravy powder has that in it. Just asking because I'm new to this and wanted to raw pack can some stew and add my own homemade stew seasoning to the jar but it has flour, and when I had asked a few preppers they all said no don't do it.

This is how I've been doing it for years and always good; if you don't feel o.k. with adding the gravy mix just omit it; should still come out really good.

Just started to can. Love meat loaf. Viewed several how to videos and decided to try this one. O.M.G. This is so freaking delicious. I made gravy with the juice and served with some instant potatoes. Don’t think it took 10 minutes to have a yummy meal. I am going to put more of this up before meat gets stupid expensive. Thanks for the recipe. P.S.. got me some Adobo to play with…lol

10 year old canned meat loaf?? I bet it's just fine. I base my rotation of my home canned goods on a 7-10 year cycle. I am a long time canner and haven't had any issues so far.
