We learned how to can pickled hot peppers last year, and we were excited to try it again using pepperoncini peppers. It is a super easy canning recipe that uses a very basic brine. We are canning up pickled sliced jalapeños, and pickled whole pepperoncini peppers. The recipes we are using come from the Ball brand recipe books.
I forgot to double the recipe in the beginning, but I'm glad that I remembered when I was filling the jars to add more vinegar and water to the brine that was cooking. The recipe in the book was for 11 cups of peppers, and we had close to double that.
Canning pickled hot peppers is a really simple way to get into water-bath canning. They also taste great and are a tasty addition to many recipes.
🌶INGREDIENTS LIST🌶
10ish cups of whole Pepperoncini peppers
10ish cups of sliced Jalapeno peppers
12 cups of White Distilled Vinegar
4 cups of filtered water
3 Large cloves of Garlic
Pickle Crisp
Red Pepper Flakes
🌶ITEMS LIST🌶
6 Ball wide mouth pint jars, lids, and bands
12 Ball regular mouth 1/2 pint jars, lids, and bands
Waterbath canner filled with enough water to cover the jars
Rack for the inside of Waterbath Canner
Jar Lifter
Bubble Tool
Jar Funnel
Pickle Packer (not necessary)
Lid Magnet (not necessary)
Large Towel to place hot jars onto
Tshirt rag (or one that doesn't have lint)
Distilled Vinegar

I'm sorry you didn't get enough this year, there's always next year or depending on where you live farmer's markets are usually a great place to get peppers. ❤️

@@TheBourneHomestead I did! What I want to know is how do you get the peppers to stay under the liquid after you've added everything to the jars to keep the 1/2" headspace? Mine peppers kept wanting to float to the top and pop out of the liquid even after squeezing the air bubbles out several times. Did I not pack the jars full/tight enough to get them to stay down or what?

Haha I know what you mean! I pack them in as tightly as I can using one of those wooden pickle packers. Getting the air bubbles out is a challenge because all the peppers try and escape and I have to do it all over again. I think this year I will try using chopsticks to get the air bubbles out and not the bubble tool that comes with the canning sets. But it’s kind of a dance back and forth of pushing them down and removing bubbles, pushing them down and then putting the lids and bands on. Sometimes it helps to do only one jar at a time even though it can seem tedious.

Did you put the peppers in whole or did you poke any holes for air to escape?

I think I did use a knife and made cuts into the peppers. Also I recommend using pickle crisp(calcium chloride)! They tasted great but the whole peppers were kind of mushy. The cut peppers are ok though without the pickle crisp.😊
