She is completely right, that you don’t have to have a cellar. I have a pantry like hers, and it’s indoors. It is in a room without windows, so that stabilizes the temperature some. We don’t store fresh food there though. Fresh and fermented foods, I keep in an old fridge in the garage. I am a little on the fence when it comes to buying a freeze dryer. Yes, it makes for better saved foods, but it’s also very expensive. A friend of mine told me to calculate how much I spend on freeze dried foods a year and incorporate that. On average I spend 300$ a year on that. That would mean, that it will take me 10+ years for it to have paid for itself in saving. I don’t think that’s realistic for us, especially since a lot of what they freeze dry, like for example broth, can be done in a regular dehydrator. I also like having broth on the shelve, simply because it’s faster and simpler, than having to rehydrate the powder. We only use the powder, if we want to add extra flavor to a stew or sauce, otherwise I use liquid broth. Take rice for example. I cook them in broth, since that adds extra nutrients and flavor. If I only had the powder, I would have to boil water, and rehydrate the powder first. As for eggs. I have seen those rehydrated, and it can be hard to get the lumps out when you rehydrate them, and they are already scrambled, which limits what you can use them for. Fresh clean unwashed eggs, can be preserved in lime water (water glassed), for 12+ months. Fresh unwashed eggs, will last up to 7 months in the fridge. Out chickens slows down production in November and start up again in February. So, I only have to preserve enough eggs for 3 months. During peak season, we get over a dozen eggs a day, but we only eat about half of that. Any perfectly clean eggs we get in that period gets water glassed. All of the dirty ones, and put in the fridge. You can’t wash them before hand, since that destroys the bloom, which is what will keep the eggs fresh. We eat the oldest eggs first, so in the end, the eggs we eat from November to February has only been in the fridge for about 4 months, the water glassed eggs we eat, never get older than 8 months. All I have to do, when we are ready to eat them, is wash them. The cold stored ones, because of dirt, and the water glassed ones because lime taste bad.

I can’t eat eggs, milk or cheese, every time I return to eat them, I get sinus congestion, and skin eczema. When I do stop using that everything clears up. Even meat too. So I’m plant based only eating real food, nothing processed I only consume what I can grow here in tropical Puerto Rico. I live in the mountains, in a cow manufacturing farm fields. Our cows as pasture raised, so I know they only eat grass fed. I only consume what we grow here in the island, they have strict laws about farm animals. I grow my own produce. And I also purchase from farm products every Friday morning from my local farmers. I don’t buy anything that’s imported

@@gladtidings4all - I'm like that too but because of alpha gal (an often severe or even lethal allergy to meat & meat products EXCEPT for poultry & fish). I end up storing a lot of veg powders & some fermented things, but usually freezing a LOT of soups. Having my own chickens helps a lot, though I do buy animal feed (fermenting that helps reduce the cost significantly too) but supplement that with all kinds of garden weeds year round for the chickens (southern US).

Do not buy it. I bought one and mine's never worked right despite lots of time with tech support. If you have a system that works, be happy with it.

Totally jealous. I live in a small apartment. I would totally love the pantry like that. Only start creating and preserving my own food about a year ago now. But I am really enjoying it. Would absolutely love to own a freeze dryer.

I’m always thinking when I see shelves of glass canned goods, if there’s an earthquake all that food could be destroyed. Something to keep those cans from falling would be wise.

Very good observation She needs to put up a barrier about 3 inches above the shelf to keep everything from being shaken off. Another thing, She needs to attach the shelves to the walls so they don't topple over!

I freeze dried a bunch of the lemon slices and then blended them up in the vita mix for powder, and I will tell you it’s the best! They were Meyer, lemons, sweet and boy was it great to have a hot cup of ginger tea with honey with that powdered lemon when I was sick just recently. I lived off it. Can’t wait to have gallons more of powdered lemon. I got the powdered ginger at Trader Joe’s but now I can freeze dry and powder my ginger as well.

Thank you so much for the insight into what it's like actually running a pantry with freeze dried food. I think you sold me on the benefits of this. My only concern is whether my solar would support it. I'm off grid and plan on adding a generator, just haven't got to it yet.

I’m going to try solar on my freeze dryer when I know we’re gonna have consistent sunshine but the nighttime is questionable.

My freeze dried goat milk was fresh, and it didn’t taste Goaty. Could be your own particular taste, but mine is great. Use it in cooking but I haven’t used it in drinking so maybe that’s the difference.

Nice pantry tour, the O2 absorber removes oxygen, but doesnt remove any moisture, if you're worried about moisture getting into a jar, etc. you can add a silica pack, although most times arent needed. Nice thing with freeze dried items they last @ 25+ yrs shelf life, in addition to the higher nutrients saved, etc. It is higher cost, and maintenance of the pump, etc. and its loud and warm when its operating, so helps to have in a garage/side room, etc. but if you save a variety of foods, it's the best way to go long term. Freeze drying has been in use for decades in Military Rations which while not rated for decades long storage, if you've seen channels where ppl try them 40-50 yrs after the fact, they can be surprisingly good. A new method of preserving is being tested now, instead of freeze drying, its Featuring Vacuum Microwave Dried and Sonic Compressed food that takes a fraction of processing time to make than freeze dried, with it's highly advanced, palatable, and nutritious components, it is the new shelf stable food.kzfaq.info/get/bejne/rtODiLqmmJ3IpGg.html

The O2 absorber has a bit of water in it, best to put it near the bottom and the dessication pack to the top. This gives it time to work.❤

Realistically from someone who has been self sufficient for 30 years, a canning/preserving pantry should not look like this in early spring. It should be running low by now unless the owner is relying on a lot of outside sources for their food supplies. The use of the word "supposed" is pretty telling. Remember folks, if you don't really know how to get and preserve your food, whatever is in your stash, is a LIFETIME SUPPLY.

Well they live on a farm there probably not just doing it out of their backyard garden like you do you live on a farm because if you live on a farm and you're not able to preserve this much food then you're not working the land enough don't come on here and hating on people because they're able to do things differently and more proficient then you are that's why they're here on this channel in the first place to share their information so sit back and take some notes instead of standing on your soapbox and telling them what they're doing is wrong

How long can it keep? Mylar bags need to have labelling and dates freeze dried. You must know what you are doing.

Holy cow $2-6 per batch for electricity in an area w cheap electric??? Ouch!!!😬 Me thinks this isn’t cost effective food preservation for us. Im glad I learned these are power hogs. So we will pass. We live north. Thankfully our basement is really cold w no windows so garden fresh produce stays good longer.

Do yall know fasting and eating only one meal a day is extremely beneficial for your health. plus you cut your food..by half...only in America are you told to eat 3 meals a day and snack..no wonder more then half are overweight and unhealthy lol
