Caramel Popcorn (w Caramelized White Sugar)

The ingredients are listed below for convenience.
Caramel Corn with Caramelized White Sugar
INGREDIENTS:
1. 5 cups (235 ml. each) popped popcorn
2. 180 gr. (3/4 cup, packed) granulated white sugar
3. 30 ml. (2 tbsp.) water
4. 70 gr. (2.5 oz.) butter + more for the pan
5. 5 ml. (1 tsp.) vanilla extract
6. 2.5 ml. (1/2 tsp.) salt
7. 1.25 ml. (1/4 tsp.) baking soda
Notes:
1. Based on a 235 ml (US cup), 15 ml. tbsp. and 5 ml tsp.
2. If possible use a 50%/50% combination of mushroom popcorn and butterfly popcorn.

Good video. The other way I see people do is the oven and a tray. But you're way looks great.

hello great recipe! why do you use a mix of both of it? it seems to me that mushroom type is way better for coating with caramel. Also would you suggest using brown sugar? thanks a lot!

The story of this video starts with me trying to replicate the iconic caramel corn made by Garrett's (a company that started in Chicago around 1950). I started with white sugar, easier to caramelize. Then I made a "copycat recipe" with brown sugar, even more delicious. The video is next to the one with white sugar. Because I tried to replicate the Garrett's recipe, I watched some of their videos and found out they are using a 50/50 combination of mushroom popcorn and butterfly popcorn. The explanation for this is that apparently, butterfly popcorn retains more caramel wich makes the popcorn crunchy while the mushroom popcorn has more volume This is the explanation for the popcorn choice & you should use only mushroom popcorn if you want. In my opinion there isn't much difference. Thanks for the comments!

You say to use 235 ml of "each" kind of popcorn, that's basically "2" cups. Yet your written recipe says "5" Cups of popped popcorn...

Hi, I watched the video again and it seems I said to use 5 cups of popped popcorn & each cup has a volume of 235 ml. (total 5x 235 ml). I also used a 50/50 combination of mushroom & butterfly popcorn (I meant 5 cups of that combination). It seems that I managed to confuse you I originally planned to use 10 cups of popcorn (5 cups of mushroom and 5 cups of butterfly popcorn) but cut it in half not to exceed the volume of my pan.
