Getting the best table fare from the bluefin or yellowfin tuna you catch on your own boat requires proper handling of the fish and that starts the moment it gets in the boat. In this video Captain Jimmy Decker shows how to field dress your catch and get it into an ice, rock salt and seawater slush that will get it chilled down quickly.

'(grumble, grumble).... I'm sixty two year deckhand ...(grumble,grumble(..24ft skiff......' LMFAO.... Great video and man I wish we could be so lucky to go Calico fishing and then run across a 100lb bluefin. The deckhand probably enjoyed the cold beer like he was 21, again!!!!!

Also good idea to stick them right behind the pec fins with a shallow cut, really pulls a lot of the blood from the blood line out as well.

Slice from butthole to chin. Separate gills from gill plates by cutting that membrane. Put your fingers under the gills where they connect to his head and pull... the whole shebang comes out.

It sucks working at your feet with a sharp tool when you are in your 60,s! I think the battery sawzal works good, just like when they are frozen!

Any pelagic fish is good to bleed, and if you want to pull that stuff out, but me I would rather fish, Bluefin tuna is such a rarity and a delicacy that it deserves special attention!

Why not use a freshwater washdown? Like I always use saltwater but why not fresh? Just for Freshwater conservation or could it do something to the fish?

fresh water pulls a lot of the flavor out of the fish because of diffusion. Fresh water will absorb the salt and other stuff out of the fish

Fresh water has chlorine and other things in it that strip the oils and totally change the texture of the fish! When you get home and clean use the hose as minimally on the fish as possible, then loin and bag your stuff and keep it cold! Or strait into the freezer.

9:15 no you cannot cut the head off while at sea. If you get stopped by USCG or your State’s fisheries, it must be attached for measurement (over/slot/under limit) or you will be ticketed and your catch taken. Thats why the commercial guys cut the gill plate off (see Wicked Tuna weigh-ins) but leave the head on.

this is California we have totally different fillet-at-sea laws and no slot limit for BFT. 2 per person, any size
