Ingredients
1 3 ½-4 pound chicken, split in half through the breastbone, backbone removed
Kosher salt; freshly ground pepper
1 ½ teaspoons Sweet (Hungarian) paprika
Extra-virgin olive oil, for drizzling
6 tablespoons salted butter, divided
2 lemons, 1 whole and 1 cut into wedges, divided
Handful thyme sprigs
1 ½ pounds small waxy potatoes, such as creamers or fingerlings
3 tablespoons shrimp paste in oil (kapi)
3 bunches scallions (18 to 20)
½ cup dry white wine or sake

!!!PSA FOR YOUR GROCERY STORE TRIP!!! There is a lot of variety of shrimp paste in SE Asian cooking and specificity is VERY important when describing which to use so you don’t get an unpleasant surprise . There’s shrimp paste that has a grey color to it which is extremely funky and concentrated - it’s used as a condiment or seasoning in conservative amounts. Think fish sauce X10. With the amount that Carla used, if you got the wrong shrimp paste, you’re in for an over salted and stinky (to some) dish. The type of paste that Carla is using that is reddish is completely different and is typically used in very specific dishes- usually as a component in meat balls in Vietnamese cooking or in stir fries

Yeah this is not gapi and is not fermented. The product she uses is not related to gapi at all and is not interchangeable.

btw the shrimp paste Carla used isn't kapi, which is actually greyish brown and almost identical to belachan, just less crumbly. this red one is a very different product that's basically made from the orange fat inside shrimp heads and is much less intense than kapi/belachan.

Yeah they should really correct that pop-up. I’m Burmese and cook with gapi (we call ngapi) all of the time. Gapi and belachan is not interchangeable with the “Shrimp Paste in Oil.” What she’s using is very mild and not fermented at all.

Do you wanna know why I love cooking videos? It gives me a break from this overwhelming world! Thank you Carla. I love that your name is music. I'm neurodivergent and a prolific musician. Kind of outsider art. I have no fans, hard to understand for most people as you might imagine. It's good for my health and development though. Music is a superpower. Amazing chicken btw.

This comes at the perfect time. I just found out a local grocery store (co-op?) by me sells small whole chickens for cheap! I can finally butcher for my buck and start making stocks from scratch! I'm so excited to spatchcock lol. I cook mostly for myself so it's gonna be much fresher & more sustainable than buying lbs of chicken I have to freeze or buy per anatomy.

I use butter + gochujang to make coward's buffalo sauce for my low heat eaters. Standard butter where I live is 82% butter fat; the Danish Co. one sounds fab.

Miso is such a good idea! Shrimp paste can be tricky for shrimp paste beginner.

I am bookmarking this for my next dinner party! btw, the shrimp paste here is *not* kapi -- kapi/gapi is much more pungent and concentrated, and looks like a grayish purple. It's often sold with a wax layer on top to help keep the smell contained while it sits in your fridge. Also, belacan is pronounced "beh-LAH-chan".

Wow, shrimp paste is very concentrated and I think it shocks western cooks with what to do with it. A little definitely goes a long way and I love the way Carla mixes it with a butter sauce. Gotta try that next time.

The shrimp paste she uses isnt the fermented shrimp paste and I’m not sure why they translate it as shrimp paste. It’s just the orange stuff from the shrimp head.
