I’m always trying to get better. What a lot of people don’t realize is I’m not just making videos and recipes. I’m also studying and practicing color grading/correction, video editing, filming techniques, script writing, graphic design for thumbnails, and so much more on top of making the videos and recipes and cooking and everything else I do. That’s why it takes about 15-20 hours to make a single video and then I still have all that other stuff to learn more about as I can. 👍🏼😁

Ever since I saw the ketoasian viral noodles I’ve been wondering about using a piping bag or condiment dispenser to make noodles instead of cutting them. This is amazing. God obviously put you on earth to uplift the entire carnivore community out of the dark ages haha

WOW! This just might be the most impressive thing I have ever seen you come up with! I tried your mashed potatoes with the chicken fried steak though, and I thought there is nothing gonna top that one. Then I made your salmon with hollandaise sauce and the family thought that was the bomb. This though, if it turns out the way it looks like it does going by Ash, I will NEVER give Ramen a second look in the grocery store. Thanks SO much for all your time and effort put into all this. I watched Nili make your carnivore mashed potatoes and laughed so hard when her girls did not like them. Kids are so uncensored and that was hysterical. Adults like the substitutes but kids want the real deal. When winter returns I will be making this ramen. Soup is off the menu in 117 degree weather. Lol. All I want now is anything cold, fast and little to no cooking. Beautiful plating of the Ramen.

Wow! I cannot wait to try this! Thanks! I used to make homemade Ramen cups (freezer style) for myself and my son's family. Since I don't do rice anymore, rice noodles are out. I thought of trying palmini noodles but this option looks like something we would all really like.

Oh you DID IT AGAIN!! 👏👏👏👏👏 Before going carnivore, I was an avid soup eater. Pho was my favorite. This won't taste like Pho, but who cares?? It's SOUP! I think I'll be making this at least 3x per week. BTW, the noodles look like they would refrigerate and reheat very well.

The easiest way to fill a piping bag is to drop the tip end into a glass. Fold the bag down over the sides of the glass. That way you don't have to hold the bag with one hand-you'll have both hands free.

Unfortunately I don’t have any glasses large though for this. I use a coffee cup and ziploc bag that way when I pipe my deviled eggs. 👍🏼

It's so good! Shrimp powder is just salt cured shrimp that are dehydrated and ground up. Great umami flavor. 😊👍🏼

Looks amazing. I wonder if replacing butter or tallow for the cream cheese would work. I avoid dairy other butter. Thanks for all you do!

I don’t think butter or tallow will work because it’s going to melt and run out. This would weaken the structure of the noodle and it would most likely fall apart.

Looks amazing! I still haven't ordered egg white powder but am gonna do it soon. I've been using "carnivore pasta" from ketogenic woman/keto twins for almost 2 yrs now and am used to them. It's 3 eggs, 4 tbsp cr ch, 3 tbsp pork rind dust, 1 tbsp parm. Zap, pour out thin on sil. baking mat, bake 350 8 min. Roll up and slice or use as lasagna, wrap. Works best as lasagna. They are okay as fettucine/linguine/spag, but pretty soft. The main advantage to these is that I'm used to them. Some keto cooks do a mix like this and cook like crepes - I just bake - much easier. This is easy and fast and uses what I have in the kitchen already. But - as I'm sure you know (cuz you've mentioned pasta that just isn't right) - this pasta isn't quite pasta. It's 70 to 90 percent. If I slice and let em dry the texture is better. Depends as I said on use - to me far better for lasagna. You can even do enchilada with em. Just ok for use w marinara/meat sauce or al fredo, and so on. In soup, no, they kind of fall apart. I have made em thick, cut em up, and then they work ok as "dumplings" for chicken n dumplings (speaking of which, u got a chick n dumplin recipe? if not, pls work out good carni dumplings! I'll look). These are not great dumplings but are okay - again 75 percent or so. Missing the right texture (I like rubbery dumplings the best - others want fluffy ones, more the northern style). Over a yr ago I saw vids for that viral gastro-chemical pasta recipe. You blend boiled eggs and add the chemical... either to the mix or the cold water, can't recall. And pipe it into a swirling bowl of cold water. They're supposed to be amazing, but ... the chems are very expensive. Steve at serious keto used chicken meat instead of eggs and got good results on the above. Anyway, you adding chicken meat to the pasta - I'm guessing - is going to firm them up a lot. Plus the egg white powder probably helps. I'm gonna go back and check out your other pasta recipes, too - I remember you had one with shrimp as an option. I'm guessing this is as good as that gastro-chem approach without the hassle of using those chems. And who knows if they're good for us.

Nicely done as usual, though the effort required is infinitely higher than I would be willing to put into a meal. If you ever develop any machines that cut the effort way down for making stuff like this or the faux mashed potatoes or whatever else I would certainly buy them.

One thing I’m trying to heal is a new issue of lactose intolerance :/ (I can of course take Lactaid if needed, but figured it doesn’t hurt to ask!) Have you tried subbing the baking soda with Kansui? Thats normally whats used in ramen noodles and is used to add spring and chew. You can also replicate Kansui by baking the baking soda, turning it from sodium bicarbonate to sodium carbonate. Im interested to see if it makes a better product or not.

Kansui is not readily available in the US, and you also have to remember you’re not using this to interact with the same kinds of proteins as gluten has in flour. I wouldn’t recommend going too strong on any of the alkaline substances (kansui or sodium carbonate either one). Sodium bicarbonate is not only readily available but is plenty strong for this recipe as it’s more for flavor than chewiness because there’s no gluten for it to interact with.

Have you tried freezing these for later use? The piping makes it seem a little labor intensive, so if possible, I would prefer to make a large batch. Also, thank you for making the recipe cards on your site so printer friendly!

The firmer texture of chicken breast makes this much more stable. The shrimp would work but likely be far softer. And they also have more water in them so the outcome would be a bit different and probably require even more egg white powder.

Hey there. So using chicken flour for a gravy doesn’t yield a great result because flour is used to thicken gravy due to the starch, which chicken flour doesn’t have. Essentially you’d get grainy liquid if using chicken flour. However I have a couple different videos thickening gravy with egg yolk which is the technique I’d likely use instead. 👍🏼

You could. I used the cubed chicken breast in the video. It would probably also work with shrimp but you’ll likely have a softer noodle.
