Chef Rose of Caro and Marie, Cebu

This recipe is a combination of two Filipino favorites - cassava cake and leche flan. You can steam or bake this recipe. The difference is that the steamed one does not have a brown top. If you want the top to brown, you can either put it in an oven toaster OR you can use a blow torch. In both cases, you need to sprinkle the top with a little sugar so that the sugar will melt and caramelize. My cassava cake recipe will stay soft even when it is refrigerated. If you want to make the cassava cake only, then just omit the leche flan portion.

Ived tried it last week maam.i got a lot of compliments from my friend here.lami kono kaayo.bali two ka baking pan ako nagamit(half sa imo recipe,but I dont have young coconut here ,wala sad koi available cheese,so plain ra akua).ang usa ako gi steam ang usa ako gi bake.nya ang subra sa lecheflan topping ako sad gi steam as lecheflan. I will make this again and again .salamat maam for sharing us your recipe.

Hi, chef, do you just peel the raw cassava and grate it, or do you preboil it or do some prep? I'd love to do this but not sure how to prepare the cassava. Love your channel!

Yes you can use grated cheese instead of sugar. Just be careful when you blow torch the cheese because they might burn. Not all cheeses will melt when subjected to extreme heat.

I believe you can. Same time I guess. I have not tried baking that in a turbo broiler so I can not give you a definite answer. Normally, it bakes about the same time assuming that you are using the same container. You might need to check the top once in a while to see that it does not brown too much before it is baked.

My mother used to baked cakes for business di pa uso ang customised mao at a very young age nakadungog na ko anang Caro and Marie kay anha usahay mopalit akong Mom sa mga pang bake. For the cassava cake, bake at 350F for about 30 minutes (depending on the size of your baking pan). For the leche flan, bake at 320F for another 30 minutes (depending on how thick your leche flan is). No need for bain marie. Thank you for watching.

For the cassava cake, bake at 350F for 30 minutes (depending on the size of your container) and when you put the leche flan, bake at 320F for another 30 mins (depending on the thickness of your leche flan). Thank you for watching.

Hello po! If we grate cassava ahead, how long will it keep in the refrigerator? Also how long is cassava cake shelf life if kept inside the ref?

Grated cassava should always be kept/stored in the freezer not the refrigerator. Shelf like of cassava cake in the ref is one week, in the freezer 3 - 4 months.

I don’t squeeze my cassava after grating. I made sure that I soaked and washed my peeled cassava before grating it.

It is in the video ma'am. About 30 - 40 minutes first and then another 30 - 40 minutes with the leche flan.

350F for cassava for about 30 mins. Reduce heat 300F for leche flan for 45-60 mins depending on your baking pan.

Yes please include the juice of the cassava. Do not squeeze. Do not drain.
