A traditional and delicious way to prepare fava beans in the Catalan style.💥
Ingredients (for 4 or 5 people):
- 4y-5 kg of fava beans will be 1 kg of shelled fava beans
- 4 sausages
- 1 blood sausage(200g)
- 100g of salted Iberian bacon
- 1 onion
- 1 tomato
- 4 or 5 tender garlic cloves
- 50g of pork lard
- Virgin Olive oil
- Salt
- ½ small glass of white wine
- 4 bay leaves
- Mint sprigs
- 1 small glass of water
Preparation:
1. Shell the fava beans and set them aside on a plate for later.
2. Peel and chop the tender garlic.
3. Peel, chop, and crush the onion.
4. Peel, chop, and crush the tomato.
4. Cut the sausages into small pieces.
5. Peel and dice the blood sausage.
6. Dice the bacon into small cubes.
7. Place the pot on the stove with pork lard and a splash of olive oil.
8. When hot, add the sausages and stir.
9. When they are golden brown, add the bacon. Stir a few times and then add the tender garlic.
10. When the garlic is almost tender, add the crushed onion.
11. When the onion is halfway cooked, add the crushed tomato.
12. Let all the ingredients fry and add the fava beans, bay leaves, wine, and a little salt.
13. Cover the pot and let it cook for half an hour over medium heat.
14. Stir occasionally. If needed, add more salt to taste.
15. When the broad beans are tender, add the black butifarra and the mint. Let it cook a bit more, stir, and it’s ready to serve!
Tip: Mint gives the dish lightness and helps your digestion ... since it is a heavy dish.
