There's no explicitly specific reason...other than keeping it fresh. Uni goes bad quickly otherwise. it's just established at a high price to make a lot of money off of it. Sea urchins are actually extremely populated and eat seaweed that other fish need to eat to stay healthy. I'm not sure if the sea urchin population where this video was taken is overpopulated, but they certainly aren't in low population I would assume due to their mass breeding. I'm not even sure why you need a fishing license to fish them and ESPECIALLY why there's a limit to catching them in the first place. Unless none of that is true somehow, you're right and there's really no reason for it to be so expensive; except the thought that it needs to be kept fresh whether or not that's true, which means it should be served around same day it was caught and for restaurants this would be a very pressured thing unless they had a good active vendor. If that last part is even true either.

@@Master-fw1kx Not really. He's referring as to why it's expensive to purchase from vendors. This is because they're very delicate to process, and more importantly, they have to be kept fresh as they'll go bad very quickly. The shipment process is also pretty eh. It has to be considered fragile with extra protection. That's at least what the reasoning for vendor's excuse of it is as far as I know anyways.

The first video I watched of yours was the first Two Sushi Chefs with Hiro and yourself harvesting Uni. I then saw it in other videos and I was thinking "Why have I never seen this at the many sushi restaurants that I've visited"? I now understand that I'll have to harvest it myself or go to a fancier restaurant. I hope Uni can be found on the northern Oregon coast. You have given us so many harvesting tips. I have always loved low tides for exploring but now I love them even more! Thank you Taku! It's so interesting to see how they have bored holes into the rocks. I can only imagine that is their doing.

Taku, you’re killing it. I think this new channel is going to open up a lot of doors for you. I’m looking forward to following you on your rise to the top. Keep up the great content. If I must complain, I’ll say that you make sushi look real easy to make when we all know that isn’t the case. That’s not going to stop me from trying this one though. Thanks for sharing this, it was very educational, informative, and best of all practical.

I grew up in the Philippines and we have lots of sea urchins but not as big as in California..thank you for showing how it is harvested and cooked...our sea urchin is not found in the rocks but surface seafloor..thank you and yes it is good.

There's places to get urchins on the Island. I've seen them on beaches in Nanaimo but idk if they're safe to eat.

That's good to know, I will have to keep my eyes open. As long as you are legally allowed to harvest them have at it. They aren't affected by red tide or contamination.

When I was in Seattle , we bought some green ones , not sure how they prep it / clean it , but there was a few broken spine / spikes inside with the eggs, I was worry if you didn’t look and just toss it in your mouth , the spine/spike could harm your inside 😱

Actually it was +0.2 tide. Uni is open all year. Winter seems to have the best yield
