You don’t need to apologize for filming making the same cake. You’re a content creator but you’re also a human being. If this is your favorite cake, make it and film it every year until you find a new favorite. Life’s too short to eat a birthday cake you don’t love. Besides, we’d love watching you make anything. A little tip. Lower your oven temperature 25 degrees when you want your cake to come out flat instead of a dome. Had a cake business years ago. Hope this helps and Happy Birthday. Love your videos

It's my birthday today - though at my age, I feel quite old and not very celebratory! I'm 58 - I remember 33 as if it was yesterday - it was a hugely fun time in my life - make the most of every day you are given - the years go by so fast X

To have a flat top to your cake layers is a simple trick. Tap the entire tin on the counter and watch the bubbles appear and escape from the top of your batter. Then bake for a flat top.

Tip for double layer cakes: I put the them bottom to bottom. That way the bottom "dome" is face down on the plate and second layer sits upright with the dome as the top of the cake. The flat sides sit together nicely. I've also seen people on bake shows use dental floss of cut through the dome part, and they still put stack the layers bottom to bottom.

You're correct that the Italian Cream Cake isn't from Italy. It's from the American South. Another cake you might like is the Hummingbird Cake. Similar basic ingredients to the Italian Cream Cake plus bananas, crushed pineapple and pecans. Makes three layers. A really good cake cookbook is American Cake by Anne Byrn. It has cake recipes from Revolutionary War times up through today. The final chapter covers frostings and icings.

Several viewers have given great tips for a flat cake top. When all else fails and you're determined to get that look, just trim it flat with a thin long knife if your cake layers are thick enough to trim. If the dome is somewhat negligible, just put the dome side down, all layers. Icing is a thinner product than frosting and usually doesn't have butter or cream cheese. Happy Birthday!

Now you have to send us all a piece of birthday cake, that looks Divine! If you have a long serrated knife, you can gently slice the top of the dome off of one cake, holding your hand flat on top as you saw, to stack flat, just an idea🥰

Wow - the ‘hard sauce’ receipt with the powdered sugar really is amazing. We did that enormous sugar receipt for our plum pudding at Christmas time.

I bake quite a bit and what's helped my cakes to be quite flat is simply to lower the temp. If a recipe calls for 350F I set it for 325F. Makes all the difference! Watching from Mississippi USA

Happy Belated birthday. Writing from South USA, the cake you made is called a Hummingbird Cake which I make it for Easter. The filling we use between the cakes is fresh Pineapple. Pecans, coconut and pineapple are a great combination, the pineapple keeps the cake moist. Keep up the great videos. Wishing you best endeavors for 2023.

Happy Birthday Nicholas ! Your cake looks yummy! One other tip, when I make layer cake I insert about 3 tooth picks from the top into both layers. It secures the layers from moving when you are frosting the cake. I do tell my friends to watch for them in case they get one of the toothpicks in their piece, LOL 😅 No one cares either if they are the lucky ones to get a toothpick, just set on the side of your plate.
