My name is Cadence Gao (中文:高寒). Some of you might already know me from Bilibili, actually one of my very enthusiastic followers has also been very generously taking and uploading my content from my Bilibili channel to KZfaq every week, so I've decided to take step forward and create my own KZfaq channel!

我是做西點的 有些手法上的做法確實看著很難受 (畢竟追求的目標不一樣) 但很多對食材的理論跟邏輯確實讓我佩服

Eye opening. It is great to know all spectrum of technologies and chemicals which nowadays chefs have the knowledge to try achieving food indulgence. Incredible starting point for me personally to explore all effects on food combined with technology in general and acquire more educations for the next generations or the generations prior.

I am only at 1:21 so don't know if this is discussed later, but the calorie counter on those smart watches is not accurate at all. Take it as a very very rough reference only

想問問片中用的是 alpha 澱粉酶還是beta澱粉酶呢?還是Glucoamylase?好像有很多種,應該用那一種呢?🙇‍♂

印象中Cadence沒在YT做過任何回覆,可惜我也沒有答案給你 不過其實這些酶的成本都不高,有興趣可以少量多買幾種來自己多試試,不用怕自己找答案。查資料+做中學可以了解很多,我相信Cadence很多知識也是這樣慢慢研究出來的

我感觉看高厨视频,好像感觉什么都学了,又感觉什么都没学,在做的时候摸不到头脑,多少的蛋白需要多少的糖来打发,这样的计算方法,对于我不是科班出身的人,要去查更多的知识。高厨只提供一个命题,会去看怎么做蛋糕的人,我觉得是当下需要这个方子。马上做出来

骂摄像师“渣男”,不过分。但考虑到如果是萌新开始学做家常菜,她们是几乎不会做像蛋糕这类需要打发蛋清的东西。所以“渣男”可能只适用于摄影师。😅

這叫 code switching,在不同語言環境裡生活較久的人很容易出現這樣的習慣。原因之一是當你用不同語言時,就算看似是同一句話,表達方式和情感力度也仍有細微的不同。以本片為例,在西方傳統廚房待習慣的人用英文罵STFU,會覺得那只是加強語氣的嘆詞,但如果改用中文說「操你閉嘴」,我們會覺得是真的被罵了、覺得不舒服。
