Pizza Dough Ingredient:
-Active Dry Yeast x 4g
-Water x 300g
-Granulated Sugar x 4g
-Bread Flour x 460g
-Salt x 4g
-Olive Oil x 5g
-Pizza Stone + Baking Paper 13inch
-Or Baking Pan
Italian Margherita Pizza Ingredient:
-Fresh Mozzarella Cheese
-Parmesan Cheese Powder (Parmigiano-Reggiano)
-Italian Sausage
-Olive Oil
-Salt
-Tomato Sauce or Pizza Sauce or Margherita Sauce
-Fresh Italian Basil
American Pepperoni Pizza Ingredient:
-Olive Oil
-Tomato Sauce or Pizza Sauce or Margherita Sauce
-Fresh Mozzarella Cheese
-Parmesan Cheese Powder (Parmigiano-Reggiano)
-Salt
-Pepperoni
Japanese Eel Pizza Ingredient:
-Fresh Mozzarella Cheese
-Eel/Unagi
-Eel Sauce
-Corn
-Dried Seaweed/Nori
-Bonito Flake
Note:
-Italian basil tastes different from Thai basil, beware~
-Fresh mozzarella ball tastes much better than packaged sliced one
-Pepperoni from the deli tastes much better than packaged one
-Pizza stone makes the dough crusty more easily especially the middle
-Baking paper can be used together with the pizza stone in case sticky
-If no tomato sauce, can use pizza sauce or margherita sauce
-Sugar can be added to the tomato sauce to change the sweet level

披萨饼底的材料: (和英语翻译一一对应)
-活性干酵母 x 4g
-水 x 300g
-细砂糖 x 4g
-高筋面粉 x 460g
-盐 x 4g
-橄榄油 x 5g
-披萨石头 + 油纸 13寸
-或者烤盘
意式披萨材料:
-新鲜的马苏里拉奶酪
-帕马森乳酪粉
-意大利香肠
-橄榄油
-盐
-番茄沙司 或者 披萨酱 or 玛格丽特酱
-新鲜意大利罗勒叶
美式披萨材料:
-橄榄油
-番茄沙司
-新鲜的马苏里拉奶酪
-帕马森芝士粉
-盐
-意大利辣香肠
日式披萨材料:
-新鲜的马苏里拉奶酪
-鳗鱼
-玉米粒
-海苔丝
-鳗鱼酱
-细柴鱼片
注意
-意大利罗勒叶和泰式罗勒叶不要搞混哦~
-新鲜的芝士球会比切丝的袋装芝士好吃很多~
-pepperoni在超市柜台买新鲜现切的也会比袋装的好吃很多~
-披萨石头可以让饼底尤其是中心更容易熟~
-披萨石头可以配合油纸,防止粘底~
-番茄酱/番茄沙司不是ketchup,而是Tomato sauce哦~
-如果没番茄沙司,直接用披萨酱
-也可以用margherita sauce,味道更丰富~
-番茄酱味道可以加糖调整酸甜度

請問沒有發酵24小時可以嗎?至少要多久呢?

可以常温发酵两小时,然后排气,分割,再发酵一小时

最好用烤箱的最高温度啊~你说的应该是摄氏度吧,那就是480华氏度,和视频里的一样的~

我做的是pub style~尤其是玛格丽特,讲究的是用新鲜的Mozzarella,食材之间要有比例搭配,不能某一种原料过量,这样吃起来更好吃。这种披萨清新不油腻,是不应该起丝的~~拉丝的是快餐必胜客风格~想要拉丝就很简单,买现成的干燥的卡夫袋装creamy melt撒很多就好啦~不过我非常推荐新鲜的芝士,味道是完全不同的

可以的呢。我用的活性干酵母,需要加水。即溶的话可以直接加到面粉里,比例上少一克~
