Sometimes, my cooking videos are complete recipes; other times, they are a behind the scenes look into the ingredients and tools I'm using. This video is the latter.
Lately, I've been getting a lot of comments about my old "pizza crust" chaffle video and if I ever figured out a way to boost the chew and/or crispness of it. In this video, I try out three ingredients I haven't worked with yet to see if any of them get me closer to a great pizza crust chaffle, and perhaps even a great pizza crust.
Based on what I learned today, I could see me rolling out a new pizza chaffle recipe within the next week or two. I also see a lot of potential future applications for these ingredients: batter/breading, cookies, crackers, tortillas, bread/buns, and (of course) a low carb pizza crust.

Just because I know people will ask: I did do a continuous glucose test after eating these chaffles. I ate a total of 4 chaffles (one of each). My glucose went up only 2 points, "peaking" at 37 minutes after eating. So essentially no impact.

I imagine you are going to take this wrong but testing blood glucose after a food only tells you what "net" glucose effect is. We measure glucose because it gives us a hint about what insulin is doing. Unless you are completely insulin dependent type1, you will not clearly see this effect from a food. What you are seeing is individual pancreatic reaction to a food kicking out insulin to cover and keep the glucose down. Good news is that glucose doesn't spike. Bad news is that insulin does and this sets back someone trying to reverse type2 diabetes or remain in ketosis.

@paulpladin9590 Since insulin testing cannot be done at home, glucose tests are the best bet to test what effect a food will have on blood sugar. If we had easy insulin home tests, that's what diabetics would use.The testing he does in this video aren't aimed specifically at diabetics, so the testing he conducts is relevant to a bulk of the viewers.

Some months ago, I gave up on trying to make a keto bread recipe I liked, and just defaulted to making chaffles instead. My go-to is still shredded mozz/almond flour/1/8t arrowroot flour/egg. That recipe originally included xanthan gum, but found the arrowroot could do the job and the xanthan wasn't necessary. Works for sandwiches, toast at breakfast, etc. ALL TO SAY...I really appreciate this useful update on some new ingredients to consider for basic chaffles. I am indeed a chaffle junkie these days :-D. I don’t think I’ve seen you more excited than when you imagined having an Italian beef sandwich 😋! As for the me, chaffles is my go to bread nowadays. Sometimes, I’ll bake some keto bread, but, for the most part, chaffles is it!! It only takes a couple of minutes instead of several! So, yes, yes, yes, please! More variations is much appreciated! I’ve experimented some myself, but, you’re the king 🤴 👑!

Chaffles make keto so doable. Especially if you are the only one in the family doing keto. Thanks so much for the return to chaffle recipes! If only we could chaffle-ize everything!

I'll gladly take the title of "Chaffle Guy" since you don't want it. Some good options for crispiness are 1 tbsp of gelatin, or 1 tsp of raw cocoa powder. Combining the gelatin with cocoa powder or coconut flour will increase the crispiness as well. For chewiness, ground flax seed seems to do a pretty good job, but imparts a lot of flavor, and I've found it works best when combined with other binders. Psyllium husk powder is very good for maintaining moisture in the crumb, but it also cancels out sweetener. Peanut powder creates a nice crumb, but results in a very dry chaffle, and adding the psyllium husk powder solves that problem. Combining peanut powder, flax, and psyllium husk, plus using baking powder and oil, creates a big stable expansion that results in a very cake-like texture. I've also achieved a muffin/cornbread like texture by combining psyllium and flax with other binders. For best results, always let the thickeners/binders sit for around 5 minutes to soak into the batter. Most of these experiments were done with ricotta instead of mozzarella.

I've been eating keto for 2 years and finally broke down and made my first Chaffle last week. 😆 They were awesome! I made sweet and savory chaffles, and made them several days in a row just trying out different things.

I've watched every chaffle video you have online, so you know I liked this video! The Ever Crisp does sound like a potentially great breading. I was never much of a bread/sandwich kind of person, but anyone who comes up with the "I Can't Believe It's Not Real Pizza Crust" will go down in history. I can't wait to see what you come up with.

I tried out a "work in progress" crust from another KZfaqr. He's putting the final tweaks on it and it's very good. It's the best keto crust I've had. It didn't have as much chew or yeasty flavor as I like, so we'll see if he incorporates my feedback.

These are my favorite types of cooking videos. Minor recipe tweaks to see how they affect the product. Somewhat nostalgic as well with the chaffles. If you have an Italian beef recipe, I am all ears.

Prior to the start of covid I was on the keto diet and did OMAD. I am no longer strictly keto but I still intermittent fast and continue to eat no sugar and am low carb now. ( I mainly eat some carbs (normally fruit) the days I work out) I love eating keto bread and still incorporate keto snacks and deserts into my diet. I made the pizza Chaffles yesterday for lunch for the first time and it was delicious.. I used the recipe of one egg white, shredded mozzarella cheese, seasonings, almond flour, pepperoni slices and diced onions. Definitely will be making again.

The food I miss most on keto is pizza. I have tried countless pizza dough recipes, but they all fall short. I hope 🙏 you can come up with a good recipe with those two new ingredients. BTW - I tried Kiss My Keto bread and it is quite good.

Have you personally made your own keto "pizza dough"? We do 2 cups grated fresh cauliflower mixed with 2 cups grated parmesan cheese & add 2 large eggs with some garlic powder and Italian seasoning (to your own taste) spray some avocado or olive oil onto 2 pieces of parchment paper, putting the dough onto 1 piece and covering it with the other, then roll it out to about a quarter of an inch thick or sometimes even thinner. Pull the top piece off and lay the the other piece with the dough on it onto a baking vessel like a cookie sheet or pizza pan and bake for about 5 mins on °400 take it out let it cool and then dress the pizza as you like it and bake again to your liking!👍😋🍕

After 20 months of eating chaffles on one-a-day IM (thee to four times per week) I tried/devleoped mu very own (I think) egg yolk only chaffle recipe with the initial goal of attaining a much larger fat content without adding calories It is now my go to recipe. These chaffles tastes and feel like leggo waffles. They have NO EGGY taste (if it bother anyone) and have a nice surface crispness. Makes eight mini-dash chaffles or two large-dash chaffles. It is so good I look forward to the weekday feedings! 7 egg yolks 4 ounces mozzarella-provolone rustic shredded cheese mix 1-1/2 tablespoons almond flour 1/2 teaspoon psyllium husk 6 ounces Irish butter (for topping) Smidegeon of Redmond Salt (for savoriness) 1350 dense and satiating calories Thanks Steve! ..

I add to mine one boiled egg to the regular chaffle mix it makes it more substantial and if you put the cheese first and then the mixture it is crunchy!

I’m rather new at KETO, starting Sept 2020. My peeve is no one talks about how to store any extra to save for another time. I wish every food video would always mention how to store that food, and how long it stays fresh. How to store fathead dough rolls for instance. And the mayo, etc. You are great to watch and I like the quickness factor. Thanks.

Speaking of trying on other equipment, one thing I've never seen is an attempt to cook chaffle batter in a regular pan, flipping it like a pancake. I'm going to give that a try sometime. As much as I like chaffles, when I use them for sandwiches I'd frequently like a larger size, and also the cratered surface makes evenly spreading the mayo (avocado oil mayo, of course) difficult. Thanks for making this video, Steve, your efforts are appreciated.

@@SeriousKeto It actually works better than I was expecting. I used standard chaffle batter of just egg and mozzarella, but since I was making chaffles that have twice the surface area (5.5 inch diameter) of Dash mini chaffles (4 inch diameter), I doubled the recipe and used 2 eggs and 1.5 cups of cheese. Using a non-stick pan, I heated it up to the Dash mini temp (350 degrees F, obtained with an infrared thermometer) and poured the batter in, then covered the pan. It took about 8 minutes before I considered the first side done. Then I flipped it like a pancake. I'm not the best pancake flipper, so it distorted the chaffle a bit, but nothing serious. Then I gave it another 6 minutes or so, covered. The result was pretty floppy, but still good enough for a sandwich, in my opinion. The addition of your crisping ingredients would probably help. I believe the time could be improved by the addition of more heat, or by use of a pan with more thermal mass; I think the pan cooled too much with the addition of the ingredients. I note my Dash mini almost immediately jumps to 450 degrees or so on its top surface when you pour in the ingredients, and that's because the thermostat kicks the heater on as soon as you pour. After a short time and with the lid closed to come in contact with the chaffle it goes back down to its standard 350. Anyway, fun experiment.

Because I’m having some inflamation issues, I decided to pull a “Steve Serious Keto” experiment. Instead of using almond flour, because it can contribute to inflamation, according to Dr. Berg, I decided to make some chaffles using Lupin flour. I made these this morning, using 1 lg. egg, 1/2 cup shredded mozzarella, 1 tbsp. Lupin flour, and a pinch of Xanthan gum....they turned out great, and even though the Lupin flour (I used Lupina) is more expensive than almond flour, I think I will continue making these to see if it helps with the inflamation....so no almonds, no almond flour, no peanut butter for a while to see what happens.

For those looking for a syrup, I make a good berry syrup with blackberries and raspberries, a little water, lemon juice and erythritol, mash it all up on the stove and maybe add a little something to thicken it and it is very good for pancakes and waffles.

I made the most amazing biscuits yesterday. Absolutely amazing. Can make biscuits for sausage gravy ( my mother in law make the best keto sausage gravy). Or you can make red lobster biscuits. I made them in my air fryer. In just a few minutes!!!!

I've only ever made the "bread" chaffles, (DE-FREAKING-LICIOUS!) and today I'll be making the chocolate cupcake ones so that my husband will stop whining. 😏😁 Because I can never remember the names of things (I'm getting old) I'll dub articles with my own twist so I can remember them. I've seen several videos talk about green plantains being allowed on keto, Also green banana flour which has a great texture. Look for recipes of something called "patacones".

Wheat dextrin is cheap if you get it in the form of a fiber supplement from the pharmacy section of your local supermarket. I use it in my fried chicken coating recipe.

Yes, I was scrolling to see if anyone mentioned this. What is the difference between using Evercrisp or replacing it with Benefiber or the Costco Kirkland brand equivalent? They're both just wheat dextrin. And are much less expensive.

Btw, have you tried making mashed, or "potato" salad from hearts of palm..I'm using just the canned sliced, microwave about 6-8 minutes until tender and blitz in mini fp, adding butter, cream cheese and seasonings. Potato salad, cook until tender but still holding shape, use your favorite ingredients for potato salad. I saw a recipe for gnocchi, but it has cassava flour....haven't tried substitutes yet.

I like my crust yeasty, so I believe it would. For this experiment, though, I didn't want to add any additional factors beyond the experimental ingredients.

As with many things that shoot straight for the stars, the chaffle and Dash seemed to be a fad that shone bright for a moment then faded altogether. Not so with me! I still love my Dash minis and am considering ordering the 4-square no mess Dash. They are the absolute best for keeping me in check with my low carb diet. Thanks for putting them back in the spotlight if only for this one video...:-)

Love your videos and Tees. Did you say that you wanted to hear how our recipe trials go, good or "batter"? Did you have any latent reactions to these ingredients, joint pain or swelling? Your reaction to the ever-crisp chaffle has me excited to try it, but I react to not only gluten but wheatgrass and I have a physical reaction (rash) to the wheat plant.

I can tell you that I'm experimenting A LOT with the Aviate brand of lupini flour and flakes that I've used in a couple videos recently. I did a video comparing 3 other lupin flours (this was before Aviate came out). Aviate is the best tasting/best carb profile I've tried.
