What affects membrane fluidity? 1. Temperature • Higher temperature, higher kinetic energy, more fluid 2. Ratio of unsaturated to saturated fatty acids • More unsaturated FA, higher unsat:sat ratio, more fluid →Unsaturated FA has C=C which cause kinks →Phospholipids more loosely arranged • More saturated FA, lower unsat:sat ratio, less fluid →No kinks, more area for phospholipids to interact 3. Length of phospholipid tails • The longer the tails, less fluid →More surface area for interaction between tails 4. Cholesterol! (refer to slide) ------ The cell can maintain fluidity during higher and lower temperatures by changing the ratio of unsat:sat, length of tails, and adding cholesterol!

why are double bond(s) present in unsaturated fatty acids but there are none present in saturated fatty acids?

Because. That's how it's named.... Saturated has more H bcs of the lack of double bonds....

as double bonds make it harder to saturate (mix in) hence fatty acids which are saturated dont have double bonds as they are easily saturated (mixed in easily)

i dont think it affects solubility! it's just that when there are more double bonds, there are more kinks, more space btween molecules, therefore more liquid at room temp :D the state of matter (solid/liquid/gas) is not the same as solubility.
