How you can store some varieties of potato, in this case Charlotte, for almost a year. By which time the new potatoes are ready.
I prepare the old potatoes to roast, then harvest some new Dunluce from a no dig bed. I simply pull the stems to find the potatoes, with no digging needed.
It's early June and also in the roasting pan are old squash Crown Prince, old onions, new onions and new beetroot.
The cooking part of this video was Edward's idea.
The vegetables roasted in 35-40 minutes at 200C/400F approx, top rung of a grill oven.

I burst out laughing, because I was eyeing that unbelievably luscious garlic bulb, hoping to find out what variety it was. And up pops on the screen 'Variety Unknown - Re-planted for 22 years'. It's obviously a Charles Dowding special!

I had about five lbs. of store bought Yukon Gold in the basement that I forgot about and they had very long sprouts like yours there. I put them into two 10 ft. trenches and grew them sprouts and all. I was able to harvest more than 60 lbs; enough to completely fill a 50 lb. grain sack, and then some.

This is now one of my favorite videos, had my mouth watering. I had no idea that 'sprouted' potatoes would still be good to eat. I think Edward has come up with a winner with this format - it's good to see the end result of your work in the garden. More like this would be great.

Sprouted potatoes give me stomach cramps. It took a while to realise what it was that was giving me the pains. I was using up an old sack.

Great video Charles. Really refreshing to see you in the kitchen. I've just harvested a big bucketful of volunteer potatoes on my allotment. Its been three years since I took on the plot and I'm still getting volunteers appear from all over the place as the previous tenant was known for just throwing seed potatoes randomly around the plot. The ones I actually sown myself won't need to be harvested for at least another three weeks. More food content please, its great to see the process come full circle and we get to see you use the produce you have grown. Thank you.

That's my kind of eating! I've got some no dig potatoes starting to bloom in Montana, USA and put a heavy amount of straw over them. I can't wait to see how they produce. Loved the cooking part.

I just love seeing potatoes come out of the ground. I have been experimenting this year though... I grow mine in buckets and large pots, but this year I looked at the plant root after tipping them out and wondered if I repotted it would it grow more potatoes - it is a root after all. So I put a bit of the old compost back in, put the plant back in, put in the rest of the old compost then topped up the bucket. Low and behold, I turfed one pot out today and there were more potatoes. I was so pleased! growing in pots of course meant that I didn't need to make room for anything else. So today I emptied another bucket, but put the plant back into my new no-dig bed - the one I had to remake yesterday after the dog thought he was helping! I will keep you posted on the result.

Thank you for sharing the roasted veggies ideas! It looks delicious! We just harvested our Pontiac Reds and the Yukon Gold potatoes. It was so nice to simply pull up the plants, feel around in the compost for the ones that were hidden, and bring them inside in their crates. This was our first harvest of no dig potatoes. Best we've ever had, and no damage from the potato fork this year! I only planted about three pounds of the reds, and got fifty pounds in return! What a blessing! Thanks for teaching us! Just you, Edward and the 40k friends and relations sitting down to supper. I enjoyed the cinematography with the grey stone wall and green and purple herbs - and the quietness. And a lovely, simple real kitchen - not a glaring set. It looks so ‘Beatrix Potter’ and yet this peaceful, healthy place exists today. It’s all very heartening.

Oh my, do try it! Roasted veggies are one of the foods I love since my childhood. Mostly with potatoes but the rest varies depending on the season. Roasted cauliflower (made only with salt and olive oil) with mashed potatoes and garlic are my absolute favorite 😍

We often just have roasted potatoes with fresh herbs for dinner. Usually with vegan yoghurt with herbs and a bit of good olive oil. Lovely and quick dinner 😋

I love seeing kitchen content! I live in warm climate and I never really wanted to grow potatoes or onions because I didn't think I'd be able to store them well. But after watching this video, I am convinced that I need to grow these vegetables. I'm going to start doing my research now. Sometimes garden inspiration comes AWAY from the garden, like in the kitchen :) Thank you!

A beautiful, simple, straightforward and unpretentious way of food preparation, I love roasted veg, especially parsnip, aubergine and fennel, and it usually tastes better when it's your own veg.

Just incredible. Vegetables are miraculous, no doubt. But you reallllly make it look easy. Zen and the art of vegetable growing, I think, is the perfect title for this video. The weather here has had me huffing and brooding a fair bit - from 20 degrees C to 33 in a day and then back again... But yes, kudos to Edward and to you. A feast indeed - on the plate for you, for the eyes for us. :-) Mind you, that thyme and rosemary had me feeling just a wee bit envious. I have thyme but rosemary suffers, just not enough sun. Lovely video as always, Charles. Gracious thanks to you and to Edward.

Lovely to see you cooking! Roasted veg is one of my favorite things to prepare. Just did new potatoes (Yukon Golds) with garden carrots and a zucchini that I missed harvesting till it was a mite too big. :) I will follow your lead on the herbs which I've somehow forgotten to use. Thank you!

I just had a flashback to childhood! I didn't realise I could keep my Charlotte's so long. I have put them back in the ground with that amount of shoots on. The traybake is now on my schedule. My veg are a couple of weeks behind this so I have something lovely to look forward to.

You can add carrot slices that are yummy when baked. I don't throw away wizened apples because they make delicious cobblers.

Great video, Charles! Root veggies are wonderful to eat.I grew up on turnips, carrots and potatoes. You had my mouth watering. I would had a little sweet butter with mine! :))

Thank you for showing us your kitchen. It looks so cozy. Vegan here so I eat like this well. By the way, when you show the finished product the doves were cooing in the background and when I turned the video off my doves outside sang the same song. All the way here in Oregon they sing as sweetly as in Britain😍

My first season of growing but last night we had steamed Charlotte's, beetroot and chard stems. I cooked the beetroot and chard greens with some skinny spring onions. Utterly delicious,tender, and no salt needed. The beetroot skins slip off after steaming. Yours look really good. Hopefully I'll have some to store. Thanks Charles.
