Glass 250 ml
Tray 20x30 cm
Ingredients:
Shortbread:
300 g wheat flour (2 cups)
50 g powdered sugar (3 full tablespoons)
5 g baking powder (1 teaspoon)
4 yolks
200 g cold butter (1 cube)
Knead all ingredients until crumbly.
Divide into 2 parts (the larger one for the bottom of the form, the smaller one for the top).
Place most of the dough on the bottom of a 20x30 cm form. Prick with a fork. Place in the fridge for 30 minutes. Knead the smaller part, wrap it in foil and put it in the freezer.
2 tablespoons of breadcrumbs
400 g of fruit (I used frozen gooseberries)
1 tablespoon of potato flour
Mix and pour onto cold cake.
Grate the dough into large pieces and sprinkle it over the fruit.
Bake for about 45 minutes without convection, top-down heater, in an oven preheated to 180 degrees, level 2 from the bottom.
Sprinkle the cake with powdered sugar
