A lot of great progress on our cheese cave! We now have a door, and stairs! The interior wall is done, and we also whitewashed the inside. Will soon be ready for cheese!
Clover Mountain Dairy is a seasonal organic farm in northeast Washington state near Chewelah and about an hour north of Spokane. We milk Jersey cows and sell a variety of dairy products.

Fine job. If you haven’t already got one, might I suggest picking up a 12V sump pump. Even with a roof over the entrance water will find its way to you door. Plus, such a pump is handy around a farm for other jobs.

We have a perimeter drain around the cheese cave, including under the door, that drains to daylight, so hopefully that should handle any water issues. Thanks for watching!

I would suggest a foam bumper block across the top of the strip door so when Stacy forgets to duck it will not be so hard on his forehead. Also do you have to get your cheese cave inspected by the health department to use it for food processing?

Yes, we’ve been working with our milk inspector on the construction of the cheese cave, and it will be inspected with the rest of our dairy. Thanks for watching!

Great job. Looking well constructed.. Will you need to monitor the temperature and humidity inside? Spud seems to be a typical "sidewalk supervisor"and the chickens were watching closely also. Gonna get good gouda out of there. Stay well friends.

Yes. The sensor we installed in the cheese cave reads in the house, so it’s easy to check it at a glance!

Looks like it came together nicely! Hopefully you won’t need a dehumidifier/humidifier!

Doubt it will get too wet in there, we need about 90% humidity for aging. Getting too dry could be an issue. Containers of water or wetting the floor are common in cheese caves. Thanks for watching!

Great Job! Looks real good and it should hold a lot of cheese. I was wondering about water at the bottom of the steps after rain. But with a roof over the entry that may not be a problem.

Nice work on all parts of building the Cheese Cave. I do wish you would have included the stair build. That would have been interesting to me. How many flavors of cheese are you planning?

Fantastic. I am curious, I know nothing about whitewash other than reading Huckleberry Finn 40 years ago. Why did you select this as the interior cover. Does it somehow protect against moisture better than a film finish? Thanks again, Im really looking forward to seeing you fill this up with cheese!

Film finishes are notoriously difficult on concrete, so that’s why we decided on whitewash. It breaths. Also, a reason it is still popular in many dairy barns, even today, is that it is a naturally anti microbial finish.

When we hit -21° outside, it got down to about 42° inside, which we’re really happy with.
