👉Ingredients:
12 slices of white bread
1/2 cup sweetcorn
1 cup red and green peppers, finely chopped
1/2 red onion, finely chopped
1 green onion, finely chopped (we are only using the green stem part of the onion)
2 cloves of garlic, minced
1 small piece of paneer
1 1/2 mozzarella cheese, grated
Marinara sauce, as required (I used @RaosSpecialtyFoods)
Salt to taste
1/2 tsp crushed black pepper
1 1/2 tsp chilli flakes
1 tsp dried oregano
Handful of finely chopped coriander
Water (to dampen the bread)
Salted butter (as required)
👉Method:
To prepare the filling, add sweetcorn, red and green peppers, red onions, green onions, garlic, paneer, mozzarella cheese, coriander leaves along with all the dry spices to a bowl and mix everything well until combined.
Now, using the rolling pin, flatten each slice of the bread as shown in the video. Then dampen each slice with some water this will ensure that the slices seal well one stuffed.
Next spread the marinara sauce in the centre of the slice and then add a heaping tablespoon of the prepared filling on top. Place the second slice on top of the first and then insert a round cookie cutter in the centre, pressing down firmly. Gently rotate the cookie cutter to ensure that the sides are cut. Now carefully lift getting the perfect round.
Now, using a fork, gently press down the corners to seal the edges. Make sure to not apply too much pressure as that will end up breaking the bread slices.
Repeat the same process with the remaining slices of the bread and once they’re all prepared, transfer them to a greased baking tray and pop it in the oven to bake these until toasty golden Brown at 425° for about 10 minutes.
Once done, remove from the oven and serve it hot with some ketchup, spicy mayo or coriander chutney.
