You and John Townsend represent times and places where they traveled to and set up at least one generation’s homesteads until they seem to have found their “Promised Land” in Wayne, Indiana (not Fort Wayne) which is now a tiny unincorporated town in southeast Indiana. This century they moved to Frankfort and ran out of steam except for the oldest and youngest of the nine who headed for Oregon. I particularly am impressed with your being both the amazing young wife and a working woman outside the home that was true of at least three of my greats until there were children then the work of the farm wife doubled and like many women who would like to or just have to work outside the home childcare while mom was away was not feasible.

@@EarlyAmerican it take a decent amount of salt,pepper, butter and maybe a little spice to give it flavor. It's bland. It take on what ever flavor you give it You can also shred it like rice. Maybe cream instead of milk. You can also roast it. Also I've added carrots. I guess it depends on how you cook it. You seperate it. I've never did the whole head like that. Beef or chicken bullion would give it a lot of flavor. Key is to add flavor. Like a cabbage, maybe by experimenting with it, you might give it another go. I imagine it got quite how. But you did good God Bless the both of you. I can only imagine what my great grandmother's went though. They didn't get a wood stove till the late 1920s. My mom learned this habit from her rural grand parents: Once its summer move your fireplace outside. Fancy people might have a so called "Summer kitchen" but even modest households can make do with a simple outside fireplace (preferably somewhere shady). It helps a lot.

My mom was German, she learned many recipes handed down for years. She boiled the cauliflower like you did, drained it and in the empty pot she mixed the butter and flour to make a rue. She then added the water the cauliflower was boiled in to make the white sauce. She seasoned it with white pepper, salt & nutmeg. It was served over boiled potatoes. They didn’t always have meat.

That's exactly the way my mom thaught me how to make cauliflower. She added the cauliflower-water and some milk to the rue. I love it and yes, I'm from Germany :)

Jes, thats the trditional way to serve it in Germany. But in my family the roue was made with more milk than cookingwater. My mother added 1 eggyolk and some lemonjuice and it was usually served with bacon. Not the American breakfast bacon.

I grew up a National Park Volunteer, doing Living History. For this new generation, what you are doing is the only way they will really learn about our history. Thank you for all your hard work. Have you watched the Townsends? Yes they do some talking and whatnot but they also dress up in period clothing and use all the same utensils etc in a colonial kitchen as well. I love that channel too. He is so wholesome 🥰🥰🥰

Very good set of videos, life in the 18th and 19th centuries was not as hard or harsh as people think, because those living in early American periods as well as in Europe would have done their best to live life comfortably. It's true a home life would begin very early and end very late at night but the routine was varied and not too exhausting. Obviously life on the American Frontier would be more difficult than here in the UK but a thrifty American man and wife would have a range of animals and a small plot of land to grow crops and would visit the local town and market occasionally for treats and supplies. The wife here would probably have purchased the cauliflower in the town market on market day.

Hi Justine 👋. That meal looks good👍🏻. Hint: "if they don't know, it won't hurt or upset them". I personally would sneak an air conditioner in the cabin where it wouldn't show up on camera. 😱🌬❄️🤣. I just realized that you don't have electricity in the cabin but it was a good thought for a while 🤣. I do know that even if you could do that, you wouldn't because you are trying to be authentic and historically correct but you have my utmost respect for cooking in 110 degrees heat. 👍💯. I for one am mighty grateful they "discovered" cauliflower when they arrived here. It is one of my very favorite vegetables, has been my entire life. I will have it raw, sauteed, boiled, roasted, in soup or mashed any day of the week! You look just lovely. No need to apologize. I grew up eating cheesy cauliflower, but it was with American cheese, and my mother stopped cooking it after the first step, just broke it apart and put a cheese sauce over it. I had to see this episode to see what difference there may have been. And to cook it in those temperatures was truly above and beyond!

To improve the recipe: adding milk or cream to cauliflower, crush it, followed by semolina or dry crumbs (white bread). Cool, so that the semolina swells and the mixture thickens, add the egg, mix and fry like pancakes. Serve with sour cream or mayonnaise. Same with carrots: it can be grated coarsely and stewed with a little water; or boil it whole and crush it with a pestle. I, just, fried and ate carrot pancakes, very tasty.

I love cauliflower, and all types of cabbage, except for kohlrabi. I consider cauliflower a delicacy. It is especially tasty fried in breadcrumbs or cornmeal in butter, for a short time; pre-boiled.
