I was blown away with this rare find! Antique ¨la trompette medaille d'or 1878 dufresne¨ french chef knife 7 1/2". It was made between 1870's-1890 in France. French chef knives, also known as "chef's knives" or "French knives," are a type of kitchen knife that is known for its versatility and durability used by professional chefs.
They are typically made with a high-quality steel blade that is sharp and resistant to corrosion. Same steel has been used for razor blades. At the same time the blade is rigid as a normal knife and flexible as a fish knife. Having this knife in hand is truly an amazing experience.

Yes, I agree! What do I think of your treadle lathe? And your hand crank? I want one of each for myself. I have to be ultra protective of my hands for the work I do, and hand tools is the way to go. Thanks for showing the way!

I am a fan and enjoy your hands on approach using vintage tools to give life back to the things you restore. I just stumbled upon another restorer you may be interested in seeing, Irene's Restoration. She restored a Soviet doll head that was broken apart and stained. It was made using paper-mache. Her workshop from which she mixed everything to restore and rebuild looked like an apothecary including a scale using weights. Her sewing machine was a vintage hand crank Singer and her level of skill was on par with your own.

The 1878 on the knife refers to when the company won an award, not the manufacturing date. From looking it up it seems they used this mark up until 1920.

The knife looks beautiful, easily another 200 years of use from it now. I really love how all of your restorations are simple and elegant. I like your new lathe! I had no idea they had treadle powered metal lathes back in the day. How cool❤️🤗🐝

Hi Boris! Another great knife transformation. I’m so impressed with the treadle powered lathe. I never expected to see that much power come from the pedal action. The new wood handle came out great. I’ve actually made one handle without tools and I can tell you it wasn’t easy. I don’t know how you do it but my hats off to you for your efforts and end results are always amazing. Stay warm my friend! It’s been pretty good weather here in California. Can’t complain about 73f degrees. Congratulations on your 50k subscribers!! 🎉

Hello dear Kathy and thank you kindly. Honestly I was surprised as well, especially with the possibility to adjust RPM by switching between three different flywheel ratios. I guess many years of repetition is paying off, it is not easy that is for sure. I am glad you are making your very own handles. That is inspiring to hear, thank you! That is an interesting knife. I use chef knives a lot and am interested in its rounded end to the blade and I wondered why. Modern chef knives have a pointed end. A beautiful restoration and some very lovely human powered tools in your workshop.

Yes, it is. Actually this knife should be pointed as any other chef knife but it seems that someone in the past changed the end of the blade. Round tip was common in before 1700's.

@@FFD_Restorations That makes sense. It is easy snap the tip off a chef knife if used to lever open a tin etc. I carefully reground a Sabatier knife to restore a point to it where that happened to me and I still use it every day twenty years later. I also noticed the grooves on the blade near the handle you pointed out and I suspect this knife eventually was thrown aside and used and abused as a knife for all sorts of rough jobs. So good to see it put in useable condition. I discovered that it is possible to buy old 'Trompette' knives on the internet quite cheaply, but they all need restoration.

Lovely restoration. I’m glad you kept the brass decoration on the handle. Were you rather brave to use a 1950s breathing apparatus? Hopefully you bought a new filter!

Thanks a lot! Yes and yes. I bought it as brand new ( after 70 years 😅) and in small grenn-ish paper box inside the metal box is another filter (new one). Honestly I am quite satisfied with it 👍

Awesome! I found it actually quite accidentally. I was buying some old tools and the guy put that knife for free after we agreed on price 😃 It is good that he did that, otherwise I think he would throw it away.

Iknow this french trade mark.. it is very old, from XIX cent. at least.. there are a lot in Argentina, very good knives... You make an excellent work. Greetings from Buenos Aires

excellent work, pretty much the perfect restoration, back to fully functioning but keeping its history and character, wish all the other restorers would do as you do instead of destroying history, suspect the brass ring on the handle is a pretty old previous attempt at holding it together and love the fact you put that piece back again, all part of it's story. And been wondering if you would get a treadle lathe at some point and now you have, and looks to be a really good one as well, it fits in perfectly with your other tools, and you now have gone way past 50k subscribers, fully deserved achievement in itself, well done again my friend

Alright, that was something. You get major brownie points for being able to work with mahogany. That is NOT a soft wood. As far as that nick in the blade, it's possible that's where it sat in a knife block or sheath. It's in the right place for such a thing. Aside from vinegar, don't be afraid to use and reuse whatever your local flavor of evaporust style rust converter is. While it's not period correct for the kind of work you're doing here, no one is going to give you problems for it. It's one place I'd say that progress is definitely a good thing. Else, flour mixed with vinegar and water to make a paste is also useful when used with plastic wrap.

Beautiful work! At first I thought the brass ring in the middle was there to compress the partial tang and make it tighter in the wood but after watching your video it seems it is purely for decoration?? Thanks for the upload:)

Awesome job. Try boiling I water. This converts rust and turn it black and inactive and neutralized. Same method gunsmiths use

Hey, welcome! I am not sure I fully understand your question ☺️ if you refer to how many hours, it is quite a lot. I do not track exactly but depends from knife to knife.

That is unusual find indeed if you never found it someone surely would have tossed it. P.s a little unknown fact for users of linseed oil, 1 2 or 3 applications isn’t enough if you fully intend on longevity, an old timer thought me to apply a coat daily for a week and after 2 coats a week for a month and then once a year after that also not to wipe off excess during the first week, we gotta pass this stuff on as to not be forgotten!

Thanks for pointing that out. I am actually aware of that ☺️ I read in old books that old knife masters were soaking wooden parts at least 3 times. Handle would be submerged for 24 hours straight in cooked linseed oil and dried for a week. Process could take up to a month. Most important is to saturate wood grain 😉

That mark in the edge was caused by the knife cutting into electrical wires and contacting both the hot and negative wires simultaneously.
