Prep the raw fish on a blue board, add cooked ready to eat gem to the raw fishy blue board and finish by adding cooked ready to eat fish to the raw fishy cooked gemy blue board. First class demo. Never mind chef it's not like we all haven't done it before!! What's the name of the hotel again?

Basic hygiene is not stupid. Even if this is just for show and no one's gonna eat the dish, 99% of chefs would be embarrassed to be filmed doing that.

If you can piss you can paint .That though was something special. I'm not sure about the chicken. I've just bought a bath and I catch Sole regularly (I fish all along the South Coast) .Definitely going to try that . minus the chicken. Certainly kicks it up a notch from the college version.

i liked him as a chef, but honestly to take such a beautiful piece of fish like dover sole and roll it in a shape of a sausage is honestly ridicolous and over the top also, didnt like the addition of chicken sauce in the dish, a bit of an excess for me this whole thing.

using chicken reduction on fish is quite common ,chicken stock is a neutral flavour ,if fish stock was used it would over power the delicate flavour of the fish

I have a love/hate relationship with British cooking. I'm sure it's all very tasty, but on an island the size of Texas, there's nothing new happening. It is ALL local, so to say "local" is a misnomer, everyone and their brother is looking back at Cuisine from medieval times (thanks to Lord Blumenthal), and beyond that, there is no evolution. But, I will say that culinary evolution, all over the world, has pretty much come to a dead stop.
