as an asian i can support the fact that he puts raw of medium rare cuts of beef in because if you put it in fully cooked it becomes stringy and hard after you add the soup

Using electric pot, the one you could do everything in it, My ramen is to cook onion and garlic with oil/butter, add some sugar/honey to make it a bit brown(not too much though). The way I cut the onion is just half it, lay flat down, and just finely chop straight down.
