Tandoori roasted leg of lamb known as Raan is the mouth-watering and finger-licking experience. The Raan was served to The Emperors and Kings only.

Ingredients
Leg of lamb 2kg (bone-in and trimmed)
Vegetable/mustard oil 3-4 tbsp
Ginger and garlic paste 2 tbsp
Coriander powder 1 tbsp
Garam masala 1 tbsp
Chilli powder 2 tsp
Raw papaya paste 1 tbsp
Garlic cloves 8-10
Crushed black pepper 2 tsp
Allspice berry 1 tsp
Fennel Seeds 1 tsp
Lemon juice 2 tbsp
Thick yoghurt 3 tbsp
Salt to taste
Potatoes (peeled) 400g
Carrots (peeled) 2-3
Shallots 200g
Mint (sprigs) 6-7
Whole green chillies 5-6
Allspice berry 1 tsp

I just followed everything only thing is I cooked for 1.5 hrs covered at 180 degrees but just veggies didn’t get cooked so I am adding another half hour (30 min) covered, lid opened and cooked for 30 min it came up so well . So 2 hrs with closed at 180 degree and 30 min at 200 degree wth open lid is my cooking time. Thanks chef keep adding more videos

Thanks for this recipe, I have marinated it and going to cook it after work tomorrow . Only difference being I plan to cook on charcoal and maybe have some Oakwood for that smoky flavour. I am not sure about the last part but will see at the time 🤞🏽

Whenever the meat is lamb, chicken or fish, you could look at Indian recipes. There are several methods of preparing it. As you are from Trinidad, if you want a spicy dry dish, you could also look for- Lamb (or Mutton) Burrah (Also spelled Burra or Barra) If you want a spicy gravy dish- Laal Maans (Literally, 'red meat', due to the red chillies used in it, from the Indian state of Rajasthan) We have several local dishes known only to mums as well 😋 I learnt a few of them during lockdown. :)

I have smoked it for 3 and half hours to have medium, internal temperature at 145 degree. It cooked well. Juicy inside even though I forgot to add some broth or water like you did. I feel I did not marinate long enough overnight like you said but still came out soft. Now my question is what if we sear it outside first and then cook? Did you cook it in oven or grill. That is very important to mention because oozing can be oven, grill, smoker or instant pot. Regards.

You could remove the thin layer of skin and trim the leg. Fat will melt away

I have two question which I do jot understanded well: 1 - The first time is 880°C? 2 - Wean you put a second time I not understamded, did you puted Butter in the Mutton or just puted like this in the oven?

Yes I did. I always will. Cook it on a lower temperature if you had your lamb dried.

your instructions were a little confusing, you said 2 hours, 1.5 hours first ok, but then you say you will cook it uncovered for another 1/2 hour but then you but then you say put it back in for 20 to 25min just the meat. I had to consider was it 2hrs plus 25min. I guess as you didnt show it uncovered with the stock in, so its total cooking time of 2hrs.?

It will depend on the weight of the joint. Normally 1 kg takes upto 40-50 minutes to cook in pressure cooker. Cooking a leg of lamb is best when roasting in oven. But by all means you can pick up method of your choice 🙏

The oven stays on the whole time while the lamb is cooking. The temperature I like to cook is 180 C 🙂

Have all the ingredients apart from the raw papaya paste...can't find it anywhere...I would like to replicate this recipe but don't want to substitute anything....what do I do??? Can I use raw papaya blended??? Help!

Please don't worry at all if you can't find raw papaya. It help tenderise the meat better. You can skip it altogether. If you have a raw papaya , blend and marinate.

I'm so confused 😢😢 I hear other chefs saying you should never put salt in your marinade coz it will draw all the moisture out but your lamb looks really moist and tender..

Adding salt isn't the only factor, it depends on cooking process and temperature at which protein is being cooked. Type of cut you use and technique hugely matters. You won't get any flavours without seasoning the meats anyway. So please don't be discouraged. There are only a few set rules and you can play about and see for yourself 🙂

Great video.. So to confirm, Did you leave the veg in the oven for 2.5 hours aswell? Isn't that too long for the veg?

Thank you for your compliments. Yes you can leave the vegetables in oven for the whole time. Because it is cooking on a much lower temperature, they won't be ruined. You could see my vegetables. They come perfect every time. Just don't slice them too thin 🙂

@@addy6861 yes please. If you want to cut them thin then an hour max will be enough for them to cook. I would get the lef of lamb out an hour before the finishing time and scatter the vegetable around so that they soak up all the juice while getting cooked 👍🏾

Yes you can. You don't have to cook it in stock.

very nice, it is look delicious, i love the meat sweet , so i put date syrup about 2 table spoon + cardamom, and mix it with others spices so the flavor of fat will be delicious

Let the lamb rest for atleast 15 minutes for tenderness. You can serve it without vegetables and the gravy. Just collect and seive the juices (lamb) and mix in a know of butter and seasoning for sauce to go with your lamb 🙏
