One of our favourite snacks, Fafda, can look daunting but is actually easy once you get the hang of it. Here's my recipe for Fafda served hot with Jalebi and some memories.

FAFDA RECIPE
Preparation time 10 minutes
Cooking time 20-25 minutes
Serving 2
Ingredients
For Fafda
2 cup Gram flour, बेसन
½ tsp Carom seeds, अजवाइन
1.5 tsp Papad Khar, पापड़ खार
3 tbsp Water, पानी
2.5 tbsp Oil, तेल
Salt to taste, नमक स्वादानुसार
Oil to deep-fry, तेल तलने के लिए
For Papaya Kachumber
2 tbsp Peanut Oil, तेल
½ tsp Mustard seeds (Rai) , सरसों के बीज
5-6 Curry leaves, कड़ी पत्ता
2-3 fresh Green chillies, chopped , हरी मिर्च
¼ tsp Turmeric powder, हल्दी पाउडर
1 cup Raw Papaya, grated, कच्चा पपीता
Salt to taste, नमक स्वादानुसार
½ tsp Sugar, चीनी
½ Lemon juice, नींबू का रस
Process
In a large bowl, add gram flour, carom seeds, papad khar, oil and salt together.
Add water and knead into a soft dough. Now apply the remaining oil and knead it once.
Take a portion of the dough and place it on a greased surface.
With the base of your palm, drag the dough in a straight line, holding the dough at the starting point with the other hand this will form a strip.
Heat oil in a kadai on medium flame.
Fry these strips over medium heat till crisp.
For Papaya Kachumber
In a pan heat oil, add mustard seeds, curry leaves, green chillies, turmeric powder and saute for a minute.
Now add grated papaya, salt, sugar and continue cooking for 2 minutes.
Finish with lemon juice and switch off the flames and serve with fafda.

You are saying the name 'Amdavad' instead of 'Ahmedabad'... Thats what gujarati do. Liked your love towards gujrat and Gujarati culture and food.

Being a Gujarati I was touched by this video. Have being fallowing all your videos, cooking the recipes and sending love from Australia, this video actually touch mine heart. I mean I couldn’t have expected such definition of Gujarati food n culture from a chef. Yes the the core is happiness besides everything we do be it food, playing garba or gathering. Thank you for amazing recipe ( I have my own version thow) and doing justice by understanding the heart of Gujaratis ( we are proud Indian first) and diversity is well accepted.

I have had this fresh in few of the most remote locations in Gujarat, two things that struck me. The beautiful rural roads and the speed at which they make Fafda. That papaya thing is killer, always eat it more than the Fafda itself.

Ranveer what is missing is the spice mix which goes on top of fafda and it’s sprinkled as soon as it comes out of the oil. It’s a mix of hing , pepper and rock salt. It also has reason as it makes easier to digest as well as elevates the flavour to next level.

Love the small small things you took care of chef, like saying "Amdavad" (Thats how we local call it) instead of Ahmedabad, using the Gujarati news paper to place Fafda-Jalebi... Just awesome!!!! Lots and Lots of love from Lovely People of Gujarat !!!
