We review the CHEMEX, discuss why we like it and how we prefer to brew with it. We also compare the Abel steel kone filter to the traditional paper filter designed specifically for the CHEMEX coffee maker.
The CHEMEX is a classic, all glass coffee brewer and serving vessel. Dating back to 1941, it was invented by the eccentric chemist, Dr. Peter Schlumbohm. He fashioned the hourglass shape that has now become an iconic part of American history. Made simply from one piece of borosilicate glass and adorned with a wooden collar and rawhide tie. The CHEMEX can be found in museums throughout the world and is included in the permanent collection at the Brooklyn Museum, Corning Museum of Glass and MOMA, NY.

Sweet! If you go with the paper filters, be sure to only use the white ones. If you want to try the brown, just make sure you thoroughly​ rinse them to get rid of the heavy cardboard taste. Happy brewing!

@@orangecactuscoffee Good call, I ended up buying my Chemex at a local store, and the only filters they carried we're the brown type. But they seem to be fine with a thorough rinsing as you pointed out. I'm definitely hooked though! Fun to make and the quality is exactly what I've been looking for! 👍 Thanks again for the help!

@@orangecactuscoffee I am going to lab test the difference in taste between the metal filter it came with and the #4 I already have and was using on a V60 pour over. On the metal filter I like the idea of letting the oil through but the cleaning is a hassle, so I will try a split test tomorrow, I have already exceeded my caffeine intake so I'll do it manãna

Thanks for the video. A suggestion if you don't mind: I think you should start your Able Cone pour (after bloom) by using the same pouring process you used to bloom the coffee, by pouring small concentric circles, then switch to a center pour. That would ensure those grounds floating towards the top were wetted again and then the slow non-agitating pour in the center allows the process to work. This would keep the grounds on the water's surface from just floating up there practically dry. Personally, I don't care for the metal cone, I prefer the paper filter, so I won't be testing my theory anytime soon.

Hi Rich, thanks for the suggestion. We completely agree with you, that would ensure better saturation and increase extraction. We wanted to give the "Able" method a try as prescribed just to see what kind of cup it would produce.

Thx for the video. Reference the grinds that stick to the side of the paper filter…. I like to grab the chemex halfway between the main pours and lightly swirl the water that’s still brewing, and the swirl catches the grinds that are stuck to the side, resulting in a level bed of grinds for the next pour. I don’t know if doing this actually affects the taste of the final cup, but it prevents me from needing to pour water directly on the filter.

Great vid, the whole pour over dripper is overrated (slow pour from my cromagnon pot is comparable) ... I use my chemex for coffee as well as filtering my cider as well ... one secret I found is when using my 10 cup chem-ex ( means chemical extraction) on larger pour overs I add a sprinkle of ground during the last two slow pours and I swear it produces a salty note to the brew ... try it ... works great for 6 Plus cup brews ... Something magical happens when the brew is sitting and the fresh sprinkle of grounds (5grams?) reacts with the co2 gas’s during second brew gas fermentation. The closest to this method is doing a cold brew for me which I always filter through some chemex filters after 18-24 hours of brewing.

Thank you for the tip! We’ll have to give that a try sometime. We also like to filter our cold brew. Usually do it with V60 papers but I bet the Chemex paper produce a super clean cup.

Orange Cactus Coffee The Best filters oddly for most body have been the kalita. I have a feeling the v60 is a lot of hype. The Paper does more than any of the brew type vessels. I dare you to try every paper in the chemex and you will find ... the paper makes the difference more so than anything else. Thanks for the vids ... keep up the great work. I really like your down to earth reviews ... very entertaining.

Which filter wins, in your opinion? I have one not made by Able (it’s by Barista Warrior and it’s their gold titanium one) and I’m going to do a shootout between it and the Chemex filter when I get some more beans this week.

Warren Lain we prefer the taste the paper filter produces. Cleaner, brighter cup, what the Chemex is best known for. Interested to hear your opinion.

Personally I prefer paper, as I prefer a clean cup. Edit: I didn't mention that I have both for the chemex.

Good idea to skip the grounds in the bottom. They contain caffenol. Which purportedly works like bad cholesterol in your body.

Zoraida Dobard we used the 6 cup version, which holds 30 ounces or 6-5 ounce cups. Chemex also makes a smaller three cup as well as larger ones, all the way up to 13 cups.

Someone can explain me, why the chemex type coffee makers are so expensive? 🤓☝️ Stainless steel filter cost 20$, it is non sense 🤭☺️but i still bought it to my friend as a gift, and the flavour was very good and soft ☝️

3-3:20 min brew time is what I usually get with the paper filter for 350g of water in the 6-10 cup Chemex(the 3 cup over extracts because the coffee bed is in much thicker layer with less surface area) and a slightly finer grind than for french press. French press not being as coarse as sea salt more like kosher salt maybe slightly coarser. To get into that range with the Able Kone I need to take the grind down to medium like what I use for the Kalita Wave. You grinds here looks like way too coarse plus fairly low ratio of coffee to water so this cup must be under extracted.

Thanks for the suggestion, Stefan! We try to keep the target time about the same no matter how much we are brewing. To prevent over extraction and the brew from running long, we went coarser on the grind. Had we gone finer, the brew time would have been closer to 4 minutes or possibly over. Are you suggesting that would be better when using the Able Kone?

Orange Cactus Coffee I’ve had 4 uses with the Osaka filter off amazon. It works really well and am surprised how fast it filters. It’s really quick. It even comes with a small packet of cleaner. Osaka is a definite contender at the price point vs Able Kone.

Paper is faster stainless takes all day...depend on what you need out of your chemex, each day has it's own choices, stainless takes 25-30mins to get 2 cups paper takes 5mins

What sort of stainless do you use? I’ve been using the Osaka stainless double cone for about a year and I find that as long as I use the spray setting on my faucet to rinse it on both sides, and grind the beanies medium coarse, it takes maybe 4 minutes tops. I found it taking forever initially but then I adjusted to a coarser grind and clean it once a day and it’s been consistent for 10 months.

Let me be the hater: 1. Two additional arms holding the kettle while you rest your "spare" arm on the table, hilarious. 2. To get rid of the sediments get an additional chemex and paper filters and pour your coffee through the filter into the second chemex. 3. The obvious: the coffee is so cloudy, but I guess that's preferences. 4. BREW VESSEL?!
