Wrong. Uncooked beef can have EColi.. that raw meat in contact with the bun COULD possibly transmit EColi.. it can be on the outside of a roast too. BUT heat and time will kill EColi.. this is why it is recommended that Hamburgers be cooked to a safe internal temperature. Any EColi contamination that would have been on the outside of the beef cut before grinding could now be distributed through out the burger. So in short, that steak meat "could" contaminate that roll. Freezing does not kill EColi or Salmonella. So do it like we do here in Philly.. Cook the meat thoroughly, put the cheese on it to melt then slap the open roll down on top! Slide the spatula under it all, pick up and flip.

technique is a bit different but the ingredients are there...mostly rib eye in Philly...though some vary and use sirloin. Onions and peppers are generally already done off to the side and incorporated.

They don't need to freeze it to slice it. They slice huge chunks of fresh beef at some of the cheesesteak places in Philly.

@haywood jeblome In order to shave Ribeye that thin without a meat slicer you NEED to freeze it in order to firm up the meat. Try slicing a fresh and thawed ribeye into paper thin slices with a knife. I'll be back here in a week when you're finally finished mangling a perfectly good piece of meat.
