CHICKEN STEW 1 Onion 1 Bell Pepper 2 Sticks of Celery 4-5 lbs of Chicken (Legs, Thighs, & Wings) Salt and Pepper for flavor 3/4 Cup of Vegetable Oil 1 Cup of All Purpose Flour 1 (32 oz) Container of Chicken Stock 1/2 Tablespoon of Cajun or Creole Seasoning 1 Tablespoon of Parsley Flakes 1 Tablespoon of Minced Garlic 1 Teaspoon of Garlic Powder 1 Cup of Water Rice to serve with Start out by heating large pot and pan over medium heat. Chop your onion, bell pepper, celery, and set aside. Season both sides of your chicken generously with salt and pepper. At this time, you want to get a roux started in your large pot. Add your 3/4 cup of vegetable oil and 1 cup of flour to your large pot. Stir consistently until you reach a milk chocolate looking color. While cooking the roux, add a small amount of vegetable oil to your hot pan. Sear the chicken for roughly 4 minutes on each side or until you see some browning. This may be a little tricky, because you want to make sure you keep going back to your roux. Adjust your temperatures accordingly, so you can avoid burning the roux. Once you have browned both sides of your chicken, remove to a bowl, then drop in your chopped vegetables. You want them to get very soft, so sauté them for roughly 30 minutes. Once the vegetables are very soft, add in the Chicken Stock, Cajun Seasoning, Parsley Flakes, Minced Garlic, Garlic Powder, and Water. If your roux has reached a milk chocolate color, then you can add the chicken stock mixture to the roux. If not, then just keep stirring the roux until you get the desired color. When you mix in the chicken stock mixture with the roux, lower your heat and stir. Add in your chicken, pouring in any excess drippings. Bring to a boil, lower to simmer, cover and let cook for 2 hours. Cook sum rice and Enjoy! 😊 *Add salt for more flavor *Add pepper for more spice

The Cajun Ninja I made this which turned out good the first day. But when I tried to reheat it the second day it stuck to the pot and burned. I also tried to put it in the microwave but the gravy just stuck to the chicken. What did I do wrong?

I just love watching your videos. We would have called this Chicken Brown Stew. And we wouldn't have used the celery or green bell peppers. But we would have made up the difference with more onions. My son has been suggesting some chicken brown stew lately. I might just have to make some after seeing this video. This makes me miss my parents so much. My Dad was a cajun, born and raised in Morgan City, Louisiana and was an excellent cook. He taught my mom how to cook. So I always ate good food. Unfortunately my Dad passed away almost 25 years ago, but, I was fortunate enough to have my Mom for another 20years after my Dad passed, and she continued to cook up until the day before she died. Now for the last 5years I've been been having to do all of the cooking myself. Alot of it I watched my parents cook and know how to fix it. I've come to you and your videos to get the recipes for things like ettouffee because those were usually things they fixed for company. They were a little bit more expensive and they didn't fix them often. I miss them often, but, even more so when I watch one of your videos. It's Smothered Pork Chops tonight and maybe some Chicken Brown Stew tomorrow. I just love how the base for one is perfect for other meats as well. We would also have Beef Brown Stew, or Shrimp Brown Stew (which BTW was always served with mashed potatoes, where all of the other Brown Stews were served with rice). We even had Pork Chop Brown Stew. OK, I am officially hungry now. Time to get dinner started. Thanks again!

I burnt my roux for this and tried to make it work. After about 15 minutes of simmering I tasted it and decided it was a waste. But then I remembered your sticky chicken recipe and fished the chicken and vegetables out of my failed stew, and did your sticky chicken recipe. It’s been the best mistake ever! The roux residue just made it so delicious and added a little Smokey richness to it. I’m gonna add a tablespoon of roux every time I make your sticky chicken now. Thank you for all of your amazing recipes!

The Cajun Ninja too many people try to over power their foods with seasonings you can't even pronounce. Our grandma's never used that...just simple recipes but knew what to mix. Lanita Frost they are probably pretty similar. Some even call this chicken fricassee. I mean preparations might have some subtle differences, but I couldn't tell you exactly what that it is. In my opinion, As long it comes out delicious, people can call their food whatever they want. 😊😋

It was a BIG hit with the family!! However, I have one question; in your typed recipe below, you state to use 1 TABLESPOON of Tony seasoning but in your video you say "1 teaspoon" which is what I used. Does it matter? haha :)

Ida Vreeland , Sometimes it's Ok to use cornstarch, but you're not going to make it in a roux ! Try browning the chicken in oil, add your veggies, then broth and or water. Bring to a boil, make the cornstarch slurry and add to the pot, let cook until certain that the chicken is fully done ! Bon appetit ! " Btw, I am a 60 year old Cajun lady !

I can honestly say, in my 40 years, I have never seen chicken stew that looks like that. The Chicken Stew I have always seen has vegetables and potatoes in it and was never served with rice or corn. My husband, who is from the south says this is all hes ever known. It must be a southern thing. I look forward to trying it. Thanks!

Your presentation was fabulous but i was devastated at the end when u covered the stew to slow cook anotber 2 hours!

Mark Dauber ha, why??... I had only seared the outside of the chicken. It still needed to cook down. I could probably do it quicker, but low and slow will always bring out flavors even better. Try it this way, and you certainly won't be devastated. 😊

Cajun Ninja, I hate to see how disappointed Mark would be if he found out that it tastes a whole lot better to eat it the next day. LOL! The same applies to gumbos, stews, and spaghetti sauce.
