I made sugar butter chigiri bread ♪
No matter where you eat, you can enjoy the flavor of butter and sugar.
If you eat one, you will want to eat another.
◆ Ingredients for one loaf
■ Bread dough
・ Strong flour (Haru yo koi) 250g, you can use your favorite strong flour
・ 100g of water If the water temperature is low, use lukewarm water.
・ If the milk is 75g, warm it in a microwave oven at 600W for about 20 seconds.
・ Instant dry yeast 3g
・ Granulated sugar 15g
・ Salt 3g
・ Unsalted butter 15g
■ Topping
・ Approximately 16 g of unsalted butter (approximately 1 g per dough)
・ Approximately 16 g of sugar (approximately 1 g per dough)
◆ How to make
1. Mix water, milk and yeast.
2. Add sugar and salt to the bread flour.
3. Mix the powder and liquid ingredients.
(East does not have to be completely melted)
4. Mix in a bowl until lumpy and serve on a table.
5. While the dough is sticky and unwieldy, cut the dough with a card, stick it together, stretch it, and wind it up 10 times each.
6. Roll and knead (about 100 times).
7. Mix the softened unsalted butter with the dough and let it blend in.
8. Roll and knead until the dough is smooth (about 150 times).
11. Shape it into a round shape and ferment it until the dough swells about twice.
(Reference: Approximately 45 minutes at room temperature of 23 ° C).
12. Cut into 16 pieces (1 piece about 27g).
13. Roll each one, cover with a wet cloth and let it rest for 15 minutes.
14. Remove the lightly accumulated gas and flatten it.
15.4 Diffract to make a rectangle.
16. Gather the four corners in the center and pinch them together.
17. Gently roll in the palm of your hand to shape it.
18. Arrange in order from the four corners of the mold, cover with a cloth and ferment until it is one size larger.

19. Make a cut in the cross with scissors.
(Slightly deeper, up to about half the height of the dough)
Place the butter cut into 20.1 cm squares in the notch.
21. Sprinkle granulated sugar on the butter.
22. Bake for 15 minutes in an oven preheated to 190 ° C.
