Chilli Fish with coconut Rice - Serves 2 to 3 people
Ingredients:
For the Fish:
Olive Oil- To taste
Golden bream or golden fish- 2 small (600 gr)
Onion- 1 large
Tomato- 1 big
Potato- 1 big (sliced)
Water- 1/2 cup
Red chillies - 5 or more if you like very spicy food
Fresh coriander- to taste
Salt to taste
For the Rice:
Thai Rice- 1 cup
Water- 2 cups
Coconut milk- 100 ml
Salt- 1 tsp
To prepare the fish:
In a pan add olive oil, onion, tomato, potato, fish,red chillies, salt, coriander and water.
Cover and let it cook for 15 minutes in a low heat and it´s ready to serve.
To prepare the Coconut rice:
In a pan place the rice (washed and soaked), then add water and coconut milk and salt.
Bring to a boil then cover and cook in low heat for 15 minutes.
(This is a delicious sticky rice)
