In Vietnam, we use coconut water instead of sugar and water, and fish sauce instead of soy sauce.

That sounds better bro, I was searching for a recipe for braised pork that doesn't required sugar and added oil. But didn't find one. I guess Vietnamese style is atleast healthier .

Dark soy sauce gives it the amber color, the regular soy sauce is for flavor

You can just use all purpose soy sauce instead and save yourself the effort. It’s basically two in one.

@dannyb3976 I didn’t say you’re wrong. Dark soy sauce is mainly for coloring. But I cooked shrimp stir fry with both options for my family and there’s definitely all purpose soy sauce as well.

@@LolaMay30 they taste like lemon rinds and also have the numbing effect that citrus rinds have aswell. im pretty sure theyre not actually related to peppercorns but instead are related to other citrus fruit which is neat

Follow the link in his description. 1.5-2 lbs pork belly, cut into 1.5-2″ cubes 3 tbsp rock sugar, crushed (can substitute with white sugar) 3 stalks scallions (white part) 2 bay leaves 2 star anise 2 slices ginger 1/2 tsp sichuan peppercorns, optional 2 tbsp dark soy sauce 2 tbsp shaoxing wine 1 tbsp soy sauce
