Apparently it’s pretty chilly. Gotta counter the melting effects of shaping chocolate with your hands, but not so much that the chocolate will be brittle!

It’s tempered chocolate. It doesn’t need to be cold, it hardens at room temperature!

Netflix has the first season he has done so far called School of Chocolate. Amazing. He teaches a class of new chocolatiers his craft. Some of them have skills, but none like his. Although there are 2 that look like they might be promising. (Still, never as good as his but....). You'll love it
