Ingredients:
- Lukewarm Water: 1 cup
- Sugar: 1/2 tbsp
- Dry Active Yeast: 2 tsp
- Maida: 3 cups
- Salt
- Milk Powder: 3 tbsp
- Oil
- Matar/White Peas/Chole: 1.5 cups
- Green Chilli: 2-3 pc
- Hing: A pinch
- Red Chilli Powder: 1 tsp
- Coriander Powder: 1 tsp
- Garam Masala: 1 tsp
- Cumin Powder: 1 tsp
- Black Salt: 1/2 tsp
- Pepper: 1/4 tsp
- Chaat Masala: 1 tsp
- Amchur: 1/2 tsp
- Chopped veggies (Onion, Tomato)
- Ginger: 1 tsp
- Pudina & Imli Chutney: 1 tbsp each
- Lemon Juice
- Handful Coriander Leaves
- Yellow Chilli Powder: 1 tsp
KULCHA RECIPE:
1. Whisk together 1 cup lukewarm water with 1/2 tbsp sugar. Once the sugar dissolves, add 2 tsp active dry yeast. Gently stir, cover and let it rest for 15 mins or till it becomes frothy.
2. Take a bowl, add maida, salt, milk powder and oil. Mix and then add yeast mixture to it. Knead everything together for 8-10 mins to form a dough.
3. Coat with oil, cover and let it rest in a bowl for 4 hours at room temperature OR 24 hours in the refrigerator.
4. After that, take small portions of the dough, keep them separately, cover and again let them rest for benchproofing for 15 mins.
5. Now, add paneer or coriander filling in the centre (optional) and roll them out. Cook on a tawa with some oil on both sides properly. Kulcha is ready!
CHOLE RECIPE:
1. Wash and soak matar/white peas/chole for 7-8 hours. Boil them for 3-4 whistles in fresh water with some salt, green chilli and hing.
2. Take a bowl, add the boiled chole, some water, all the spices mentioned in the ingredients list above, pickled green chilli, chopped onion, tomato, pudina chutney, imli chutney, ginger, coriander leaves, lemon juice and yellow chilli powder.
3. Mix everything well, serve with kulcha and enjoy!
