This is the recipe for traditional Indian punjabi Choley Bhaturey. Absolutely delicious spicy choley (chickpeas) with deep fried dough which is just like another type of poori.
Ingredients for Bathura:
• 2 Cups plain White Flour (maida)
• 2 Tablespoon of oil
• 3/4 cups of water
• 2 tablespoon fine semolina (suji)
• 1 teaspoon of salt or as your taste
• 1/8 teaspoon of baking soda
• Oil for deep-frying
Ingredients for Choley:
• 2 cups chickpeas ( Kabuli chana) soaked and boiled
• 1 medium sized boiled potato
• 1 cup finely chopped onions
• 1/2 cup oil
• 1 tomato’s puree
• 1 tablespoon of ginger garlic paste (lehsun, adrak)
• 1/2 teaspoon chaat masala
• 1/2 teaspoon of dried mango powder (amchur powder)
• 1/4 teaspoon black salt (kala namak)
• 1/2 teaspoon of garam masala
• 1/2 teaspoon of cumin powder (zeera powder)
• 1 tablespoon coriander powder (dhania powder)
• 1 teaspoon of crushed red chilies (kuti lal mirach)
• 1 teaspoon of red chili powder (lal mirach powder)
• 1/2 teaspoon of cumin seeds (zeera)
• 1/2 teaspoon of baking soda
• 1 teaspoon of salt (namak) or as your taste
For garnishing:
• 1/4 cup chopped Fresh coriander ( hara dhania)
• 1-1/2 inch piece of ginger (adrak) cut in julienne
• 1 onion sliced
