We love eating Dosa and Sambar but due to lockdown all restaurants are closed. Thus, we decided to make Dosa and Sambhar at home ! Check out the video to see our amazing Chopped Dosa 😂
Sambar recipe:
Making tamarind pulp
1. Before we begin making sambar, it always helps to soak tamarind in water earlier. So soak 1 tablespoon tamarind in ⅓ cup hot water for 20 to 30 minutes.
2. Once the tamarind gets soft, then squeeze the tamarind in the water itself. Discard the strained tamarind and keep the tamarind pulp aside.
Cooking lentils
3. Rinse ½ cup tuvar dal (100 grams) a couple of times in water.
4. Drain all the water and add 4 times water in the dal
5. Put it in pressure cooker or pan to boil
6. When the pressure settles down on its own, open the lid and check the dal. The dal should be completely cooked and mushy. mash the dal with a spoon or wired whisk. Cover and keep aside.
Cooking vegetables
8. When the dal is pressure cooking - rinse, peel and chop the vegetables. When making sambar, chop the vegetables which get cooked faster in large sizes like Bhindi (ladyfinger), pumpkin, brinjals (small aubergines) okra, drumsticks etc.
Making Sambar:
9. Add boiled vegetables, tamarind pulp, sambar powder in the mushed dal and Sambar is ready !

Hey guys I'm Tamil, we eat dosa on a daily basis , still everyday when I make dosa it sticks to the pan ... So don't lose heart. And when making dosa with a normal pan, clean it thoroughly, then brush oil all over, then take a slice of onion and rub it all over ... Even a slice of potato helps.. then spread the dosa batter. The pan shouldn't be too hot when you pour the batter. Wait for a couple of minutes until it's cooked, it ll start separating from the pan on its own. Then flip it over. You can even cover the pan with a lid and cook the dosa. In that case, you need not flip it over. Hope this helps👍🏻

Don’t feel bad Sandy. I can’t tell you how many “chopped dosas” i have made for my husband over the years. He only gets proper dosas whenever we go back to Singapore or at the Indian restaurants where we are at.

Unless baked perfectly on pan with reasonable temperature you should not try to remove it. Any kind of pan you can use. Pre treatment of pan is must means treating with sprinkling abit water after heating the pan or rub cut onion with thil oil on pan Try to use always thick pan of any kind even granite can also be used Hence you can maintain uniform temperature on the surface. The batter thickness is to be learned through experience. As the dosa baked all around corner sides of dosa slightly rise above pan. That's the right time to remove dosa from pan. Then it will not break. There are so many different types of dosa should be prepared accordingly. Thick, ; thin; roast; butter; ghee; onion; panner; masla ; rava etc, etc. You can twist the taste of dosa as you like. I like & enjoy her humming laughing all the time Good wishes from my whole family to you both.

Once the iron tawa is hot rub onion on the tawa for 2 mins( whether it's non stick or iron tawa)

and u need thick tawa .. then we can really make thin dosa :) in hotels they get thin one bcz they use very thick tawa :) and we use very thick iron tawa .. we make different kinds of dosa :) 10 more types :) yammy

Put some oil and fry sn egg. Remove the fried egg. Then cut an onion into half and rub it on the pan then pour the batter ans swirl it with the ladle. Cover n cook. The dosa will come out easily. All the best guys.

Hey Guys, I am watching this late, but let me give you some steps for making Dosa as done at home. 1. A day before in the evening, rinse 1 cup (Urad Dal White and Round) + 2 or 3 Cups of Rice thoroughly. (2 cups rice for thicker crust and 3 for thin and crispy crust). 2. Leave them soaked overnight with water touching the middle of your fingers. 3. Grind the next morning in batches adding a the soaked water to get a semi-thick flowing consistency. (Something like Mango Shake \ Puree Consistency). Don't add too much of water as this can be adjusted later. 4. Add a tea spoon of salt or salt according to your taste and mix it well. The batter can be refrigerated and is good for up to 5 days. Fermentation adds more flavor to the Dosa. Hotels keep mixing the previous days batter to get the flavor. 5. Use a flat pan and put the flame on high heat. Now sprinkle some water on pan to reduce the temperature. 6. Now using a Dosa spoon, add two spoons of batter and start rotating from center and spread the batter outwards till it covers the pan and reduce the flame to medium. 7. Brush the edges of the pan with oil and sprinkle a bit on the Dosa. In general this is a mix of oil and water that is used to sprinkle on the edges and on the Dosa. 8. .Allow it to roast for 1-2 minutes on medium flame and after a minute scrape and lift the Dosa at the edges and then towards the middle you will find it will come off easily. Dosa has to be moist at the top, too high heat or low heat will make it stick to the pan or leave it uncooked. Repeat the same procedure.. 9. You may find this difficult at the beginning, but once you get a hang of it, it will be very easy with the right tools. This was always my go to food for breakfast and dinner and saved a lot of time. Dosa goes well with Mashed potato and Peanut chutney, which are simple to do and along with batter and can be refrigerated for 3-5 days..

It's always like that the first time especially with a iron tava. Next time after washing pls apply oil and keep for this tava it will be lot better and dosa has to be done on medium flame all the best guys good try happy that sambar turned out good👍

When you want to make dosa you have to prepare the batter yesterday itself, firstly you have to soak one glass rice and half glass urad dal in water for about 7 hours then you have to make a paste while you are grind add about 1 small spoon of methi seeds, then keep the paste like that and the next day when you want to prepare dosa, take that batter mix some good amount of water then add little bit baking soda then it's good to go, whatever pan you will use you will get perfect dosas

Same thing happened with us...On a normal tava(not non-sticky)..keep your batter little thick...it would be okay then..so it would more look like uttapam (thick dosa)

Hey, I use an iron pan too. One big tip is... once u sprinkle 3 drops of oil on the pan, rub it thoroughly with onion, like , u can cut the ends of the onion and rub the pan with the onion. It makes the pan rightly greasy. In fact, you get excellent crunchy yet soft dosa on iron pan, than a non stick one. Try this greasing with onion.

I'm from South We dsnt use non-stick pan the most actually fr a perfect dosa with circular n to flip it perfectly we usually use a separate pan n cook nothin else in it If supose u found u aren't able to flip it perfectly or it sticks u need to fry a egg upon it thn apply som oil mak ur stove low ........ N here u get a superb gorgeous dosa

Put a lio oil on the heated pan then medium the flame n th prob was with the barter which was very watery so it shud be a lil more thick n then put it on the tawa whichever tawa then put oil in the corners and in the middle not so much but in a gud way for atleast 2.3 dosas till the tawa gets greesy n see the changes But u guys tried so hard n it was so lovely to watch n that's how the dosa was made with love no matter how it looked but i bet the taste was great n tes do put a lil salt in the batter

Hiii...i am a South Indian..right from bottom down...Kerala God's own country...dosa and idli are very easy preparation food...we can use both even with sambar or coconut Chutney. First of we have to buy a non stick pan ..greese some oil on pan then the dosa batter must be poured, batter must be thick not so loose the flame must be medium too...once the sides of dosa turns brown just turn it to the next side to cook. And for sambar u can add all the vegetables together with the dal and a pinch of salt to cook in a cooker then after 3 or 4 whistles can slowly open once the vapour has gone and add one or two spoon instant sambar powder and mix it well by adding water if required. Then pour some oil in a pan and crackle some mustard seeds along with curry leaves and dried chillies and add it to the sambar. Now yummy dosa and sambar is ready to eat😋

for iron pan, heat the pan in high heat add lot of oil. cut a big onion into half horizontally and rub over the heating pan. do this for a minute or two. Then remove the excess oil simmer the stove... after say 3 or four minutes pour the batter at the center and spread it. once it is frying i.e approx. 1.5 minutes, then turn it for a minute. otherwise you can also pour the batter, spread it and cover the dosa with a pan top or a lid and this way steam will also cook the dosa and dosa will be soft.

Apply more oil with half cut onion after apply dosa paste pour little bit oil in all around the corner and always keep fire at low once corner area. Roll towards inside then u try to rotate dosa

For iron pan, you need to oil it well and then heat it to high temperature. After pouring and spreading the batter wait till you see brown edged because if it has cooled in the base it would not come out. Hope this works :)

Hi avi and sandi when you make dosa in iron thava heat thava and rub the thavapan in onion that is cut onion into half and take a fork to poke half onion and rub to thava then dosa comes perfect iam south indian I do same when never come. You both are good pare

Good attempt. Sambar looked great! The iron tawa needs to be “seasoned”. Wash, dry with paper towels and then lightly oil (I use a oiled paper towel on top & bottom of tawa) then store away from moisture. Use the pan frequently for other things with oil or butter (ie. pancakes, omelette, even buttered toast for grilled cheese sandwich ). Always oil after washing and it will become seasoned with use and last you guys a lifetime. And the dosas will come out perfectly...be patient.

Non stick pan plus bit of oil bottom and round edges with some teaspoon of oil and wait for sometime it may work

Many years ago when i did my training in Taj hotels Bangalore . I had met a Chinese chef chef lee.He was very intellegent in making various Chinese Japanese malasian Indonesian and various south east Asia food cusine. He was very interested in learning Indian cusine . Chef lee would never take leave . In his spare time he was very eager to learn about Indian cusine. I had seen him making roomali roti tandoori roti perfectly. He told me that he was very eager to start a multicusine restraunt in china and he wanted to make alot of Indian cusine dishes

I ate dosas and idlies everyday being a south Indian. I hated it when I was a kid. Now that I stay away from home, I realized how tasty dosas actually are. I miss home made breakfast every morning. Try more south Indian recipes they are very delicious

One quick tip to make dosa non sticky on hot iron pan is using an onion.. if you have onions just cut one onion into half and rub it on hot thava before you put batter on it. That should work.
