Join Chris Morocco in the Bon Appétit Test Kitchen as he prepares fried fish sandwiches with pickled cucumbers and fresh tartar sauce. Any flaky whitefish will do the job here-Chris uses cod for this recipe but hake, halibut, and haddock work just as well.

0:00 Fried Fish Sandwiches
0:18 Make tartar sauce
0:43 Combine mayonnaise, mustard, relish, capers, lemon zest and juice, garlic, and salt
2:02 Pickle cucumbers
2:15 Thinly slice cucumbers lengthwise and put into bowl
2:32 Add vinegar, toss to coat, and let sit
2:41 Toast buns
3:16 Brush insides of buns with melted butter and toast in skillet
3:33 Heat oil in skillet until thermometer registers 375°
3:40 Make dredge and batter
3:53 For the dredge, combine flour and cornstarch in a bowl
4:07 For the batter, in separate bowl, combine flour, cornstarch, baking powder, cayenne, and Old Bay seasoning
4:43 In another separate bowl, mix beaten egg and beer
5:05 Add egg mixture to dry batter mixture and whisk
5:19 Fry fish
5:21 Season fish with salt
5:26 Dredge and batter fish
5:49 Add fish to hot oil
6:02 Flip fish when deeply browned on bottom side
6:21 Cook until fish temperature is 125-130°, 7-9 minutes later
6:26 Transfer fish to wire rack set inside sheet pan
6:32 Assemble sandwich
6:37 Add dill to cucumbers
6:43 Plate by layering bottom bun, cucumbers, fish, lettuce, and sauced top bun
7:11 Taste!

For real! The 10 seconds later when he does a perfect palm split on the garlic was great too. I'm realizing more and more watching things like that how frickin cool it looks when I'm cooking 😂 always thought people were just being nice when they talk about liking to watch.

Really love this way of cooking fish. Quite yummy. I'd just pick a different fish than cod. Cod is ok, but a little on the bland side.

In Australia at fish and chip shops there are often fish burgers... The best fish in my opinion is Australian smooth hound (Flake or gummy shark). Only really popular around Melbourne Australia.

Can this be done in the air fryer? I just don’t see the point in using a ton of oil just for myself, plus I don’t trust myself around hot oil in general lol

What’s the best way to do this without the vegetable oil? I want to use Avocado oil, but it’s too expensive to do a fry like that. Can I get away with shallower or is baking it going to be better? Maybe broil?

Shallow fry with a batter isn't great, but if you switched to breading instead, you could absolutely shallow fry

This is a great start. Add sliced Swiss cheese and an onion ring and optionally substitute the tartar sauce with sweet and sour plum sauce. So tasty

nah dude, I see so many 'chefs' doing the same thing-ya'll toast your buns B4 the burger is even ready--hehehe...I'm no chef, and even I toast my buns ;p, while the burger rests-after it's been grilled/pan fried or whatever, duh? plus the flavour of toasting the bun in the same pan that the burger was just fried in, the flavour enhancement is...well, ya'll brown/sear your meat before roasting/stewing, ever wonder why...? ;p then when your done toasting your buns, if you're feeling adventerous, a lil h2o and flour, use that pan&goodies to make yourself some gravey...just my two cents, spend it as you will... :)) excuse me I forgot it's Fish, not beef ;p

It's a fish burger not a fish sandwich. Burgers use burger buns and sandwiches use normal sliced bread. Why do Americans say this?

burgers are made with beef. or a veggie patty we also call a veggie “burger”. but it has to be a patty to be a burger. in the US

Lettuce on any fried sandwich is pointless. It doesn’t add anything but soggy lettuce and sauce slippage. Give me a couple slices of tomatoes and some thick crunchy pickles.
